The next time a chocolate craving hits: I've got you covered.

I am always craving chocolate cake. It's a problem. There is a cake store on my way to work, and it takes all my strength not to go in and buy a cake. But now that I've started making these Double Chocolate Mini Muffins, I am not craving cake as much. These are some of the best chocolate muffins I have made in a while, and it is such an easy recipe to make! Lately, I have been having issues with making mini muffins. I always end up with a dry muffin and it makes me so sad. This recipe gives a moist muffin every time.

Feel free to make a double batch because if your family is anything like mine, these muffins won't last long!

Double Chocolate Mini Muffins Ingredients

This mini double chocolate muffin recipe is made with just a few simple ingredients. All you need is:

  • all purpose flour
  • white sugar
  • light brown sugar
  • baking powder
  • natural cocoa powder
  • salt
  • large eggs
  • whole milk
  • vanilla extract
  • any neutral oil (vegetable oil or canola oil work best)
  • mini chocolate chips

Tips

Storage: Store any leftover muffins in an airtight container at room temperature for 2 days, or in the fridge for up to 7 days.

Freezing: These muffins freeze very well too. Just place the cooled double chocolate muffins in a large freezer bag and try to remove as much air as you can. Then place them in the freezer for up to 3 months. When you want to eat them, allow the muffins to warm up at room temperature.

Do not use muffin liners. ​Unfortunately, these muffins will stick to the paper liners. It is best to just spray the mini muffin tin with cooking spray.

Use different types of chocolate chips. ​I like swapping out the chocolate chips for mini white chocolate chips or mini dark chocolate chips for a more rich chocolate flavor.

Ingredients

  • 2 cups all-purpose flour
  • ½ cup granulated sugar
  • 2 tablespoon brown sugar
  • 1 tablespoon baking powder
  • ¼ cup cocoa powder
  • ½ teaspoon salt
  • 1 large egg
  • 1 ¼ cups milk
  • 1 tablespoon vanilla extract
  • cup oil
  • ¾ cup mini chocolate chips

Instructions

  • Preheat the oven to 400℉. Lightly spray 48 mini muffin cavities with cooking spray and set aside.
  • In a large bowl, mix together the flour, sugars, baking powder, cocoa powder and salt.
  • In a small bowl, mix together the egg, milk, vanilla and oil.
  • Slowly mix the wet ingredients into the dry ingredients until just combined. Fold in the chocolate chips.
  • Divide the batter evenly into the prepared muffin pan and bake in the preheated oven for 10 minutes. Allow to cool completely in the muffin tins before transferring to an airtight container.
