I guess I'll acknowledge it.
I'm back at school. After two weeks of break, I'm going in for summer school. First week back and I'm already exhausted. But with Victoria Day on Monday, I am SO ready for this long weekend!

This morning, I woke up at 5:30AM. And when I wake up, there is no power on this earth that can put me back to sleep.

Of course, I have my first class at 1PM, so it's not like I want to go all the way to UBC just to wait around, especially since it was cold and raining. So what do I do instead?

Make pancakes of course!

And since I love putting cream cheese in everything, I would feel like I was discriminating if I didn't put any into pancakes.

If you like cream cheese, then hang on to your hats. This will blow you away. They were melt-in-your-mouth pancakes, but every now and then there would be a lovely chunk of cream cheese to surprise you on random bites.

If you don't like those little surprises (which my brother found alarming but not all too unpleasant) I would try melting the cream cheese. Otherwise, go nuts!

  1. Cathleen, those pancakes are perfect! Love the golden brown colour and they sure look fluffy. Yums!

  2. That sounds like the best little surprise I could think of, I love that tang of cream cheese, especially with some sweet syrup.

  3. I love the idea of little bites of cream cheese in pancakes! Sometimes, I'll sweeten up cream cheese and smear it on top of waffles or pancakes, so this saves me a step

  4. yes I totally understand your sentiments on having to go to summer school. I always went to summer school because I felt like I needed to hurry all the time. This summer it's not going to be any different as I will be teaching summer school. Ugh! if I had these pancakes everyday though that would totally make everything worth it.

  5. You found the perfect way to feed yourself and give you all the strength you need to cope with classes and cold!

  6. I have never tried adding cream cheese into pancakes. This looks good, will give it a try when i have cream cheese to finish off 🙂

    for our next Sunday breakfast.
    Thank you Cathleen!

  8. Hey Cathleen, I'm so glad you stopped at my blog so that I could find these lovelies! I love surprises, especially little cream cheese surprises!
BTW, you live in one of my favorite places in the world! My entire family lives in Victoria, and I live at the opposite end of the continent; so I look forward to visiting every summer!

  9. I love making pancakes for lazy weekend breakfasts. What a neat idea to add cream cheese to it - they look great! I admire your energy so early in the morning...and good luck with summer school!

  10. Hi Cathleen, a girl or woman who can bake and cook is worth her weight in gold I always believe. I know 5 very pretty young women who do not have 'coking' in their resume, and 3 have missed the ferry so to speak.

Same time I knew a few lady friends who might not win a beauty contest but happily married, and two of them with husbands that can be mistaken for Gregory Peck and Robert Redford. It was their cooking and baking.
I too would have been a bachelor much longer but for a woman's cooking!

And your this cream cheese pancakes, Maple syrup?....it's a sure bet, one bite and can forget mother's name, ha ha ha.
    Outstanding, Cathleen!
Have a fun weekend and keep a song in your heart.
    Lee.

  11. A girl after my own heart lol Cream cheese in everything for sure ! What could be more perfect than cream cheese in those pancakes ? Droooool !!!
