Is it bad that I'm already thinking about fall flavors?

I know that berries are only around for a short amount of time, but fall flavors have a special place in my heart. And with all the ripe bananas I have in my house during the summer, I can't make enough banana bread! Even though it's not the time of the year for baking things, I have been craving banana flavor for some reason. And since I am too lazy to go to the grocery store to buy banana bread, I made this Cranberry Pecan Banana Bread to use up all of my bananas with brown spots.

Cranberry Pecan Banana Bread Ingredients

This Pecan Cranberry Banana Bread recipe is so easy to make, and uses ingredients you probably already have at home. All you need is:

  • white sugar
  • salted butter
  • mashed banana
  • whole milk
  • large eggs
  • all purpose flour
  • baking powder
  • fresh pecans
  • dried cranberries

Tips

Storage: ​store this banana cranberry nut bread in an airtight container at room temperature for up to 4 days. If you want it to last longer, wrap the loaf in plastic wrap and store it in the fridge for up to 7 days.

Make small loaves. If you didn't want an entire loaf, separate the banana bread batter into mini loaf pans. You will just need to cut the cooking time in half, baking them for around 25-30 minutes, or until golden brown and a toothpick inserted into the center of the loaf comes out clean.

Variations

Change up the mix-ins. I personally love the cranberry and white chocolate combo during Christmas time, so I will often swap out the pecans for white chocolate chips for the holiday season. But you can swap out any of the mix-ins with whatever you have on hand.

Use fresh or frozen cranberries. ​If you wanted some juicy cranberries in this banana cranberry bread, you can use frozen or fresh cranberries instead of the dried ones. You will need to add some extra cranberries though, around 1 ¾ cup of fresh tart cranberries.

Ingredients

  • 1 cup granulated sugar
  • ½ cup salted butter, softened
  • 2 medium bananas, mashed
  • ¼ cup milk
  • 2 large eggs
  • 2 cups all-purpose flour
  • 2 teaspoon baking powder
  • ½ cup pecans, chopped
  • 1 ½ cups dried cranberries

Instructions

  • Preheat the oven to 350℉. Lightly spray a loaf pan with cooking spray and set aside.
  • In a large bowl, cream together the sugar and butter until light and fluffy. Mix in the bananas, milk and eggs until fully combined.
  • In a separate bowl, mix together the flour and baking powder.
  • Slowly mix the dry ingredients into the wet ingredients until just combined.
  • Fold in the pecans and dried cranberries.
  • Pour the batter into the prepared loaf pan and bake in the preheated oven for 1 hour, or until a toothpick inserted comes out clean.
