You guys!! Where has the time gone?
Christmas is just a little over 2 weeks away, and I have only a handful of presents bought.
Do you think people would accept some baked goods as a Christmas gift? Because these blondies… They would be my favorite gift to give right now.
The great thing about these blondies is that you can put anything into them: chocolate chips, cranberries, crushed up candy canes…or a mix of all of those. Be creative! Maybe a different flavor for every gift you are making!
I just bought a large jar of coconut oil this weekend, and it is making my WEEK! Opening the jar and smelling the coconut…it reminds me of being 14 and working at a bubble tea store in the mall. My FAVORITE drink to make was real taro and coconut bubble tea. That drink was what I would drink in my teenage years. Along with matcha milkshakes and real mango bubble tea…
But the smell alone makes me want to bake with it at every single opportunity I can. And making these brownies was definitely one of them.
Now that I have finally been introduced to blondies in my own kitchen, I invite everyone to join me! Can you think of a better Christmas gift?
Unless you wanted a new laptop. But these blondies might very well come in a close second.

Coconut Oil Blondies
Ingredients
- 1/2 cup coconut oil, melted
- 1 cup brown sugar, lightly packed
- 1 large egg
- 1 1/2 tsp vanilla extract
- 1/2 tsp almond extract
- 1 cup all-purpose flour
Instructions
- Heat oven to 350˚F. Lightly grease a 8×8 baking pan and set aside.
- In a medium bowl, cream together the melted coconut oil and brown sugar until smooth. Stir in egg, vanilla and almond extract.
- Slowly mix in the flour until fully incorporated.
- Pour batter into the prepared baking dish and bake in the preheated oven for 20 to 25 minutes until a toothpick inserted into the middle comes out clean. Remove from oven, and allow them to cool. Cut them into squares and store in an airtight container.

These are gorgeous and I love that they don't have chocolate chips in them (weird, I know, but sometimes you gotta let the blondie be blonde!)

So cool that you worked in a bubble tea store! I love bubble tea (mango is my favorite). I also enjoy baking with coconut oil and usually try to use it as a substitute for butter. I still need to try it with blondies like you did – they look great!
Yum! I love coconut everything and these sound so good! I totally love homemade gifts (especially delicious ones) and I bet your loved ones would be delighted to have a box of treats from you! Was this supposed to be an 8by 8 pan? In the 9 by 13 they are not even half an inch high. Or maybe some baking powder?
Sorry!! Yes, you are right. It is an 8×8 inch pan. I am so used to writing my 9×13!! I changed it now. Thanks for the catch!

Ok mahalo(thank you) made it today and I absolutely love it,it’s super easy to make and tastes amazing love this recipe using coconut oil so much better than recipe that calls for butter it’s just as tasty and delicious if not better than the butter version imo! Tried it because I had no butter and I had coconut oil so I am stoked that I found YOUR coconut oil blondies again mahalo plenty for sharing im from Hawaii so coconut oil is all around me

I just omitted the almond extract because I didn’t have any on hand so I just added a little more vanilla extract!
