Chia seed pudding. You either love it or hate it. It's the texture of chia pudding, right? Slimy, cold.. But I think it's delicious.

Ever since I have made my matcha and vanilla chia seed pudding, I have been eating chia seed pudding left, right and center. Waiting to take pictures of the pudding seems like a punishment to me, because I want to eat it all in one sitting.

But to all of you who hate the texture, hate the taste, but KNOW that it's good for you and WANT to like it, I have the recipe for you.

I firmly believe that my food processor can do everything. Don't have a pastry blender? Use a food processor. Want to make a smoothie and lost your blender? Use the food processor! Hate chia seed pudding? No problem, USE YOUR FOOD PROCESSOR!

Now in this Chocolate Peanut Butter Creamy Chia Pudding recipe, I am hiding two ingredients that many people can't deal with. Chia seeds and prunes. Sounds like a weird combo, no? I promise you it is perfect if you are a chocolate lover who also wants a healthy way to eat it.

You just need 6 simple ingredients to make this easy chocolate peanut butter chia pudding recipe. All you need is:

  • milk
  • whole chia seeds
  • creamy peanut butter
  • unsweetened cocoa powder
  • pitted dates
  • vanilla extract

Tips

Make this peanut butter chocolate chia pudding vegan by using plant-based ingredients. ​Instead of using cow's milk us a non-dairy milk. I personally love either coconut milk or oat milk because it makes a thicker, pudding-like texture. But I have had good results using unsweetened almond milk and soy milk too.

Storage: ​store this creamy chocolate pudding in a sealed container in the fridge for up to 2 days.

Don't have a food processor? ​A high speed blender works just as well.

Variations

Switch out the peanut butter. ​The best part about this recipe is how versatile it is. You can use natural peanut butter, seed butter, or even cookie butter if you wanted a less healthy treat. Peanut butter powder can also be used in place of the peanut butter.

Add in some fresh fruit! Mixing in some fresh berries are a great option to make it seem more like a healthy dessert recipe. I love raspberries or strawberries best.

Top with your favorite toppings. ​I am a huge chocolate lover, so I love sprinkling some chocolate chips or chocolate shavings on top. But granola and fresh fruit are also great options.

Ingredients

  • 2 cups milk of choice
  • ½ cup chia seeds
  • ¼ cup creamy peanut butter
  • ¼ cup unsweetened cocoa powder
  • 3-4 pitted dates (or prunes)
  • ½ teaspoon pure vanilla extract

Instructions

  • Whisk together the milk and chia seeds in a medium bowl. Add in the peanut butter, cocoa powder, dates (or prunes) and vanilla. Stir a couple of times and place in the fridge overnight.
  • In the morning, scrape the contents into a food processor, and process until smooth.
  • Portion into bowls and top with desired toppings. Serve right away, or store in an airtight container in the fridge until ready to serve.

  2. That´s a lovely idea on how to use chia seeds. I sprinkle it every morning on top of my cereal, but that´s a great idea on how to use it in a different way!

    Haha, I do believe you, because this looks wonderful and almost fluffy! I used whole chia seeds in my chia pudding and I quite liked that too. This however, wowser!
    Is this recipe for one or two people? For some reason I aaaalmost suspect you ate all off it, sneaky! S'what I would've done anyway 😀
