I am always looking for a quick and healthy breakfast idea. With 2 small children, it is difficult to make any kind of breakfast without one of them crying. As a result, I have been making a lot of overnight oats lately as a quick meal prep idea. But I wanted something different this week. And when my toddler suggested baked oats, I really couldn't say no.

These Chocolate Chip Protein Blended Baked Oats are one of my favorite things to make in the morning. It is the best breakfast idea for when you want something healthy that everyone will eat. Trick your children into thinking that they are eating cake for breakfast? I think that is the best thing about these oats.

Chocolate Chip Protein Blended Baked Oats Ingredients

You just need 8 simple ingredients to make this chocolate chip oatmeal bake. All you need is:

  • rolled oats
  • any kind of milk
  • baking powder
  • vanilla extract
  • large egg
  • vanilla protein powder
  • stevia
  • chocolate chips

Equipment

  • small high-speed blender (or food processor)
  • small baking dish (such as a ramekin)

Tips

What type of oats to use. ​I find old fashioned oats work best, but you can use quick oats or even steel-cut oats in a pinch.

Make it vegan. ​You would need to replace the regular milk, egg, protein powder and chocolate chips for a plant based option. 

  • For the plant-based milk: my favorites to use in this recipe are either cashew milk, coconut milk or oat milk. However, non-dairy milk options like soy milk or unsweetened almond milk work as well.
  • Egg replacement: make a flax egg. All you need to do is mix together 1 Tablespoon ground flaxseed meal into 3 Tablespoons warm water and allow to sit for 5 minutes.
  • Protein powder:​ whey protein contains dairy, so try to find a pea protein or almond protein one.
  • Chocolate chips​: Many chocolate chips are accidentally vegan. I love the brand Enjoy Life.

Switch out the chocolate for your favorite toppings. ​You can experiment with so many different flavors. I love using fresh berries, dark chocolate chips and cashew butter, but there are so many different ways that you can make it your own.

  • Preheat the oven to 350℉.
  • In a small blender, combine all of the ingredients except the chocolate chips. Pulse until smooth.
  • Pour the oat mixture into a ramekin. Top with the chocolate chips.
  • Bake in the preheated oven for 20-23 minutes. Allow to cool slightly before eating.
