So here's the situation. I am one of those people who can only tolerate eating bananas if they are mostly green. Any riper than that and I can't stomach it. I'm a little picky with them, so that is why I bake with bananas quite often.

But I have gotten smarter with buying bananas, so now I buy only two or three at a time. The problem with that though is that if they go ripe, I don't have enough bananas to bake with.

Enter these shortbread cookies. Using only one ripe banana, there is no need to buy more bananas so that you can close them up in a bag until they ripen up. Perfect!

Banana Shortbread Cookies

Ingredients

  • 1 ⅔ cup all-purpose flour
  • ¼ cup cornstarch
  • cup icing sugar
  • 1 cup salted butter softened
  • 1 medium ripe banana mashed
  • 1 ½ tablespoon lemon juice

Instructions

  • Preheat the oven to 375˚F. Line a 9x9 inch baking pan with parchment paper and set aside.
  • In a medium bowl, combine the flour, cornstarch and sugar.
  • In a separate bowl, mix together the butter, banana and the lemon juice. Slowly mix together the dry ingredients until fully incorporated.
  • Using a rubber spatula, press the cookie dough into the prepared baking pan and bake in the preheated oven for 14-15 minutes, or until golden. Remove and allow to cool completely in the pan before cutting into slices.

  1. Bananas are so good in cookies, brownies, breads, etc - everything baked! In fact, that's the only way I actually consume them. 🙂 Right now I have 6 green bananas sitting on my counter - and I will be waiting for them to go ripe so that I could bake something!

  4. It's funny how people are so particular about the stage of ripeness the banana has to be when they eat it. Personally, I like mine nice and yellow. These cookies look delish!
