It's Sunday. The day where you can almost sense the looming black cloud ahead that is Monday. The start of another week. Oh no, here we go again.

Even though all the courses I'm taking are very interesting, the travelling, long days, and homework kind of put a damper on my day. Being a math major, I am not accustomed to reading so much for homework, so doing so many education classes is quite a challenge for me.

But one thing that is not a challenge is making delicious lunch recipes! I have been loving making Caesar Chicken Salad and Quinoa Tabbouleh to bring with me for lunch, but this Apple Tuna Salad may be my new favorite. It is so versatile! Have it with crackers, on a sandwich or just with a spoon. I promise, it will be an instant favorite!

  • Canned tuna: The main ingredient! you can use chunk tuna or solid tuna, or a combination of the two! Just remember to break it up when mixing.
  • Mayonnaise: This holds together all of the ingredients, and adds to the creamy taste. For a lighter taste, swap it out with Greek yogurt.
  • Apple: Make sure you use crisp, tart apples to ensure you don't get a mushy tuna salad.
  • Celery: To add an extra crunch to the salad.
  • Lemon juice: Gives the tuna salad a light and refreshing taste, and keeps the apples fresh.
  • Dried dill: Adds a fresh, earthy flavor to the tuna salad. Personally, I dill is my favorite spice to go in tuna salad, but you can replace it with dried parsley or chives if you like.
  • Salt and pepper: To taste. This brings out the natural flavors of the other ingredients.

How To Make Apple Tuna Salad

Step 1: In a medium bowl, mix together the canned tuna, mayonnaise and lemon juice until fully combined.

Step 2: Mix in the apples, celery, dried dill, salt and pepper until fully combined.

Apple Tuna Salad Expert Tips

To prevent the apples from browning: toss the diced apples in a little extra fresh lemon juice before mixing into the tuna salad.

Storage: You can store the tuna salad in an airtight container in the fridge for up to 5 days.

Do not freeze. Unfortunately, mayonnaise-based salads don't freeze well since the dressing will break down and separate upon thawing.

Flake the tuna well. Using a fork, make sure the tuna is flaked into small, uniform pieces so that the dressing coats every bite evenly.

Ingredients

  • 2 (170g) cans tuna, drained
  • ½ stalk celery thinly sliced
  • ½ medium apple peeled, cored and cubed
  • ¼ cup mayonnaise
  • ½ teaspoon dried dill
  • 1 tablespoon lemon juice
  • salt and pepper to taste

Instructions

  • In a medium bowl, mix together the tuna, mayonnaise and lemon juice until fully combined. Add the celery, apple and basil, and mix well. Add the salt and pepper to your liking and enjoy!

Notes

  1. Storage: Place the tuna salad in an airtight container and refrigerate for up to 5 days.
  2. Do not freeze! Freezing will cause the mayonnaise to break down and separate. It will also cause the apples and celery to get soggy.
  3. Use crisp apples. This will help add an extra crunch, and prevent the tuna salad from getting mushy.
  4. Break up the tuna evenly into small pieces, to ensure that the dressing coats the tuna evenly.
  5. To prevent the apples from browning, toss them in a little extra lemon juice before mixing into the rest of the tuna salad.

  2. I will be going to New York for yoga teacher training and not looking forward to my long commute every day... I love reading but hate reading on moving vehicles, it makes me sick and nauseous. Gardner's multiple intelligences is fascinating! Good luck this year!
