It's Sunday. The day in which you can almost sense the looming black cloud ahead that is Monday. The start of another week. Oh boy, here we go again.

Even though all the courses I'm taking are very interesting, the travelling, long days, and homework kind of put a damper on my day. Being a math major, I am not accustomed to reading so much for homework, so doing so many education classes is quite a challenge for me. I'm a pretty slow reader, so I make the most of my commuting time and read on the bus/skytrain/everywhere.

This week I'm reading a very interesting chapter on intelligence. Reading about Gardiner's multiple intelligence was pretty fascinating. Although I was a little irked that one of the intelligence did not include creating delicious food, which I thought I demonstrated this morning when I made this tuna salad.

This tuna salad has it all. Tuna, apples, and, like I said before, my favorite ingredient: lemon. All mixed up together to make this delicious tuna salad that I can bring to school for lunch.

So what do you think Gardener? That's what I thought. Genius.

This Apple Tuna Salad is the only tuna salad recipe you will ever need. Made with apples and lemon, it adds a kick to your classic tuna salad recipe.

Ingredients

  • 2 (170g) cans tuna, drained
  • 1 stalk celery, thinly sliced
  • 1 medium apple, peeled, cored and cubed
  • 4 tablespoon mayonnaise
  • 1 teaspoon dried basil
  • 1 tablespoon freshly squeezed lemon juice
  • salt and pepper to taste

Instructions

  • In a medium bowl, mix together the tuna, mayonnaise and lemon juice until fully combined. Add the celery, apple and basil, and mix well. Add the salt and pepper to your liking and enjoy!

    Tasty sandwhich,love the combination of tuna and apples.

  3. Apples and tuna...I like both, but didn't think of mixing them together in salads. The sandwich sure looks very inviting!

  4. Cathleen, you're totally hilarious! I think I vaguely remember something about Gardner, and maybe I just figured out why I didn't bother to retain this info (seriously - what could be more brilliant than a perfectly created meal - c'mon Gardner)!! But seriously ... yum! I love adding apples and grapes or dried fruit to chicken salad, but it never occurred to me how good apples would be with tuna! Thanks for setting me straight! (Now ... if only you could work on setting Gardner straight, right!?!?)

  5. I love tuna salad but have never added apples to it. I bet they add a nice sweetness to the tuna and crunch. I usually add dried cranberries. Now I'll have to add some apple. Thanks for sharing.

  6. Cathleen, looks like Gardiner's multiple intelligences is due for a revamp to include ability to make yummy food! This is a first for me - apples in tuna salad, sure sounds good :)Monday's a holiday here for me and I am heading for Tuesday blues....

  7. Yes the black cloud of monday is upon me 🙁 However, this tuna salad would really hit the spot right about now. I love the addition of apples!
