I think you know that I have a problem when 3 out of my past 5 blog posts have been a mug cake of some sort. Is there a "mug cakes anonymous" I can attend? Somehow I think that I would be the only one there.

But I am cleverly disguising this creation as a "not-so-mug cake", because:

  1. It is not in a mug, and
  2. It is not a cake.

So is it that I am addicted to my microwave? Well, with summer approaching, I probably want to stay as far away from my oven as possible. This is just practice for when the unbearable heat makes it too uncomfortable to bake anything. (Like that would stop me..)

This 5 Minute Apple Crisp for One is such an easy recipe to make, there is no excuse NOT to make it. The apple filling pairs so well with the crisp ingredients, it is the best way to satisfy your crisp craving. Or apple pie craving. And it only takes 5 minutes to make.

5 Minute Apple Crisp for One Ingredients

You just need a couple of simple ingredients to make this single serving apple crisp. All you need is:

  • rolled oats
  • all purpose flour
  • brown sugar
  • melted butter
  • ground cinnamon
  • apple slices
  • vanilla ice cream (optional...sort of)

That's it!

FAQs

What type of apple to use? It depends on how sweet you want it, and what kind of texture you are looking for. I love using granny smith apples because it keeps its texture, and has a nice tart taste. But any medium apple that you have on hand will do just fine.

Can I use quick oats? You can use quick oats, but it won't have the classic crisp texture.

Instead of melted butter, can I use cold butter? Yes, however it may not be a 5-minute microwave apple crisp as promised. When using cold butter, mixing the crisp topping ingredients may be time consuming. I would suggest using a pastry blender to make it easier.

Do you need to use a small ramekin? ​No! If you don't have a ramekin, use a microwave-safe bowl or a large mug instead!

Variations

For an extra crunch: add some nuts to the crisp topping. I love adding chopped walnuts or pecans.

Switch out the flour. If you wanted a healthier option, you can switch it out for either whole wheat flour or almond flour.

Ingredients

  • 2 tablespoon rolled oats
  • 2 tablespoon all-purpose flour
  • 1 tablespoon brown sugar
  • 1 tablespoon unsalted butter, melted
  • ¼ teaspoon ground cinnamon
  • 1 medium apple, peeled, cored and thinly sliced

Instructions

  • In a small bowl, mix together the oats, flour, sugar, melted butter and cinnamon until fully incorporated. Set aside.
  • In a mug or a ramekin, layer the sliced apples on the bottom. Microwave for 30 seconds.
  • Remove from the microwave and sprinkle the oat mixture on top. Microwave for an additional 2 minutes.

  6. One year old apples?! I never knew that but I guess it makes sense since to have apples all year round they have to be stored or imported. I love your individual desserts!
