
I was walking through the aisles of the grocery store, when I see a sign on a box of cookies. It said “grab breakfast by the biscuits” Now this really jumped out at me. Breakfast? Down the cookie aisle? Impossible.
As soon as I payed for my groceries, I rushed home to make my own breakfast-y cookie. You may be thinking “Oh no Cathleen, what did you come up with now?”

I don’t know about you, but I love the flavor of cinnamon in the morning. It warms the cockles of my…stomach. And I approve of cookies at any time of the day.
These Apple Snickerdoodles are perfect for breakfast, snack or dessert. They have fruit in them, so they are healthy…right??

One of the ingredients you may not have is nutmeg. I don’t know about you, but I am quite addicted to nutmeg. I love buying it whole and grinding it myself, but I have also had success with this recipe by leaving it out.
Work with what you have on hand!

I always have quite a lot of cinnamon sugar left over from these cookies, which I always use to top buttered toast in the morning. Because I can’t STAND food waste!
If these cookies aren’t the best part about fall, I don’t know what is.


Apple Snickerdoodles
Ingredients
- 1/2 cup salted butter, melted
- 2/3 cup brown sugar, packed
- 2/3 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 2 Tbsp cornstarch
- 1 tsp baking soda
- 1/2 tsp salt
- 1/4 tsp ground nutmeg
- 2 small apples, peeled, cored and diced
Cinnamon Sugar topping
- 1/4 cup granulated sugar
- 1/2 tsp ground cinnamon
Instructions
- Preheat the oven to 350˚F.
- In a medium bowl, cream together the butter, brown sugar and 2/3 cup granulated sugar until light and fluffy. Beat in the eggs and the vanilla.
- In a separate bowl, combine the flour, cornstarch, baking soda, salt and nutmeg. Slowly add the dry ingredients to the wet, mixing until fully incorporated. Fold in the apples.
- In a small bowl, combine cinnamon with 1/4 cup of granulated sugar.
- Using a medium cookie scoop, form balls with the batter and roll in the cinnamon sugar. Place on a lightly sprayed baking sheet.
- Bake for 15 minutes, or until the edges are golden. Transfer to wire racks to cool completely.
