In a food processor, pulse the dates until they look like small pieces.
Add in the chia seeds, almonds, oats, peanut butter, maple syrup and coconut oil. Pulse until the mixture resembles coarse crumbs. Fold in the chocolate chips.
Using your hands, press around 1 Tablespoon of the mixture into a tight ball. Place on a baking sheet or plate, and place in the fridge for at least 30 minutes.
