Mini Banana Muffins

Easy Mini Banana Muffins recipe. This easy breakfast idea uses mainly pantry staples, making them the perfect snack that the whole family will love.

Summer weather means that I have an abundance of overripe bananas. No mater how fast we eat the bananas, we will always have at least two brown bananas in our fruit bowl.

So of course I am going to make as many recipes as I can with them. I've already made a classic banana bread and banana cake this week. Time to make a mini banana muffin recipe.

These Mini Banana Muffins taste like a traditional banana bread but in muffin form. The perfect quick snack for when you are wanting some moist banana muffins but don't want to eat a whole muffin.

Mini Banana Muffins Ingredients

You just need a couple of simple ingredients to make this mini muffin recipe. All you need is:

  • all purpose flour
  • baking powder
  • baking soda
  • ground cinnamon
  • mashed banana
  • white sugar
  • melted butter
  • large egg
  • vanilla extract

Equipment

  • mini muffin pan
  • non-stick cooking spray
  • large bowl
  • medium bowl
  • cooling rack

Tips

Storage: Store these banana mini muffins in an airtight container at room temperature for up to 4 days. You can also store it in the fridge for up to 1 week.

Freezing: ​These muffins freeze very well. Just place the cooled muffins in a freezer bag, and place in the freezer for up to 3 months. When you want to eat them, either allow to thaw at room temperature, or microwave for 10 seconds.

Variations

Mini Banana Chocolate Chip Muffins: Just make these muffins according to the recipe card, but mix in some mini chocolate chips (or regular chocolate chips if that is all you have) to the dry ingredients.

Mini Banana Nut Muffins: This might be my favorite muffin flavor. Just fold in some chopped nuts into the mixture, then sprinkle some more on top of the muffins for an extra crunch.

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 3 medium bananas, mashed
  • ¾ cup granulated sugar
  • cup salted butter, melted
  • 1 large egg
  • ½ teaspoon vanilla extract

Instructions

  • Preheat the oven to 375℉. Lightly spray two mini muffin pans with cooking spray and set aside.
  • In a medium bowl, mix together the flour, baking powder, baking soda and cinnamon.
  • In a large bowl, mix together the bananas, sugar, butter, egg and vanilla until smooth.
  • Slowly mix the dry ingredients into the wet ingredients until just combined.
  • Divide the batter evenly between the two pans and bake in the preheated oven for 11 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
