Chocolate chip recipes have been my weakness for a long time now. Every time I go to Costco, I need to get a large bag of chocolate chips, and it is almost embarrassing how quickly we go through chocolate chips in this house. With making my Chocolate Chip Cookie Pie and my Chocolate Chip Nutella Drop Cookies on repeat these past couple of weeks, I am left with around 1 cup of chocolate chips this morning. Which means it is time to dump them into some pancakes.
I have actually made these Whole Wheat Chocolate Chip Pancakes many times this past month. But I needed to keep recipe testing because I had a specific idea on how I wanted them to taste. And I can promise you, these whole wheat pancakes are the best of the best in all of the iterations that I have done.
Key Ingredients

- Whole wheat flour: You can also replace some or all of the flour with all-purpose flour.
- Milk: I love whole milk to make this extra creamy, but lower fat milk works fine as well.
- Vinegar: To "sour" the milk. This creates extremely fluffy pancakes. You can replace the vinegar with lemon juice.
- Brown sugar: For a little extra sweetness. You can replace this with granulated sugar or maple syrup if you like.
- Butter: This adds moisture when cooking, and ensures the insides stay soft while the edges cook up golden.
- Eggs: They bind together the ingredients, and help make the pancakes light and fluffy while cooking.
- Baking powder: Acts as the primary leavening agent, creating bubbles to ensure the pancakes rise high and become light and fluffy.
- Salt: Enhances all of the flavors! Always add a little salt to anything you create.
- Chocolate Chips: According to my kids, the best part about these pancakes! You can replace them with whatever mix-ins you like.
How To Make Whole Wheat Chocolate Chip Pancakes

Step 1: In a small bowl, mix together the milk and vinegar. Let it stand for at least 5 minutes to "sour".

Step 2: In a large bowl, mix together the flour, baking powder and salt. In a separate bowl, mix together the eggs, butter and soured milk.

Step 3: Mix together the wet ingredients into the dry ingredients until combined. Mix in the chocolate chips.

Step 4: Heat a skillet over medium heat. Spray with cooking spray. Scoop ¼ cup of batter on the skillet and flip when bubbles start to form. Cook the other side until golden.

Whole Wheat Chocolate Chip Pancakes Expert Tips
Freeze any leftovers. Cook up all of your pancake batter, then allow any leftovers to cool to room temperature. Place the cooled pancakes in a large freezer bag and freeze for up to 3 months. When ready to eat, toast the frozen pancakes!
Allow batter to rest. This is one of my biggest tips for making pancakes. Allowing the batter to rest for at least 5 minutes will allow the flour to hydrate, creating fluffier pancakes.
If you don't want to freeze leftovers, you can store them in an airtight container in the fridge for up to 4 days.
Do not overmix the batter. Mix until the wet and dry ingredients are just combined. If you mix it too much, it will create rubbery pancakes rather than light and fluffy ones.

I think I eat breakfast for dinner all the time, maybe because I'm too lazy in the morning 🙂 These pancakes look great 🙂
Breakfast for dinner is one of my favorite meals! Even though I have time to make a big breakfast in the morning, I'm not that hungry - fruit and a hard-boiled egg is more like it. For lunch or dinner, though? Bring on the pancakes! These look terrific - thanks so much.
