Vegan Vanilla Muffins

Easy Vegan Vanilla Muffins recipe. These soft, pillowy treats taste like a cupcake without the frosting. A great nut free dessert.

Ingredients

  • 1 3/4 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/2 cup oil
  • 1 cup water
  • 1 Tbsp vanilla extract
  • 1 Tbsp white vinegar

Instructions

  • Preheat the oven to 350˚F. Line a muffin pan with paper liners and set aside.
  • In a medium bowl, mix together all of the ingredients until smooth.
  • Divide evenly in the prepared muffin cavities and bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Notes

I use avocado oil in this recipe, but any neutral oil works.
