Summer is finally upon us, and I have got to say, I don't remember it ever being this hot.

You might feel bad for me until you hear that it has only been 22˚ so far. So yeah, I am a wimp when it comes to the weather, what can you do?

Well what can you do? Instead of immersing myself in a tub full of ice (which was my first idea..) I made ice cream instead. You know, the ice cream that will take the least amount of effort for my sluggish self. The vanilla kind.

Now when I hear vanilla, I hear "blah". Everyone who I know thinks vanilla is so ordinary, so boring. I disagree 100%. Vanilla is fabulous. And this ice cream is even better. I often find myself daydreaming about vanilla. But now, I'm only daydreaming about this ice cream.

My boyfriend praised it as the best ice cream he has ever tried. And trust me, he's a picky one. There is nothing "blah" about this ice cream. It is the perfect summer treat.

Vanilla Ice Cream

Homemade Vanilla Ice Cream recipe. Lighter than your typical ice cream recipe, this makes a great summer dessert idea.

Ingredients

  • 4 ½ cups half and half cream (or coffee cream)
  • ¾ cup granulated sugar
  • 2 tablespoon pure vanilla extract

Instructions

  • In a large saucepan, mix together the salt, half and half cream, milk and sugar. Heat on medium heat, and mix frequently until the sugar is dissolved. Remove from heat and mix in the vanilla extract. Refrigerate until completely cold, preferably overnight.
  • Remove from the fridge and freeze in your ice cream maker according to manufacturer’s instructions.
  • Place the ice cream in an airtight container and freeze until ready to serve.

Notes

Total time does not include time in freezer.

    Easy recipes are my cup of tea. Love how simple this is to put together. My daughter is an ice cream fiend in the summer, so I'm sure we'll be making this more than once!

    It's been in the 100's for the past month and I crave ice cream everyday when it is this hot. So this homemade vanilla ice cream will come in handy.

  3. You make me want to go out and buy an ice cream maker! What creamy, lovely ice cream you've made! Years ago, when we lived in Brazil, I bought one because ice cream there was ridiculously expensive to buy. I discovered that so was cream so it hardly ever got used. Guess I'm a little slow on the uptake sometimes. 🙂 I must have given it away at some point.

    My favorite part about vanilla is that is tastes great on its own but it also goes well with so many things, like strawberries or peaches or brownies or endless other delicious possibilities.
