It's that time of year again.

Time to stock up on Girl Scout Cookies.

And time to finish all the boxes within 1 week, then needing to reorder more. It's the vicious cycle of this cookie season.

Because I am snacking on these cookies all day long, here is a reason to eat them for breakfast too. This Thin Mint Latte Oatmeal!

If you have been following me for some time now, you will know that I have been obsessed with recreating my favourite lattes as oatmeal.

Cinnamon dolce latte? Boom! I have a healthy cinnamon dolce latte oatmeal recipe. My fall obsession of pumpkin spice latte? Yum, I have a Pumpkin Spice Latte Oatmeal for that one. So when I saw the Thin Mint Latte at Dunkin Doughnuts, I knew I had to recreate it as an oatmeal.

Thin Mint Latte Oatmeal

Plus it's so easy to make! All you need is:

  • brewed coffee
  • milk
  • oats
  • chia seeds
  • stevia
  • mint extract
  • vanilla yogurt
  • thin mint cookies

That's it!

Now that I'm eating these cookies for breakfast as well as snacks and desserts... I will probably have to order more boxes of these cookies twice a week.

Definitely worth it!!

Ingredients

  • ½ cup strong brewed coffee
  • ½ cup milk of choice
  • ½ cup rolled oats
  • 1 tablespoon chia seeds
  • 1 packet stevia
  • 1 drop mint extract
  • ¼ cup vanilla yogurt
  • 2 Thin Mint Cookies, chopped

Instructions

  • Heat the coffee and milk in a small saucepan. Add in the oats, chia seeds and stevia. Bring to a boil, and reduce the heat. Allow to simmer for 4-5 minutes, stirring occasionally. 
  • Remove from heat and mix in the mint extract. Pour the oatmeal into a bowl, and top with the yogurt and chopped cookies.

    We eat oatmeal regularly for breakfast and are a big time coffee drinkers. Combining the flavors together is a brilliant idea. And the thin mints are top...just the best!
