We are 18 days away from Spring, and I am already craving all things berry.

And while I know that I should wait until berries are more in season, I just couldn't resist buying strawberries this week. Then of course, when I buy berries I need to put them into my daily oatmeal. This Strawberry Cheesecake Oatmeal might sound over the top, but trust me. It's a sweet treat that will get you excited to wake up in the morning.

What do you need to make this Strawberry Cheesecake Oatmeal?

A couple of pantry essentials, plus fresh strawberries of course. All you need is:

  • milk
  • water
  • oats
  • cream cheese
  • powdered sugar
  • strawberry preserves
  • strawberries
  • graham cracker crumbs

That's it!

Stove vs Microwave

One of the questions I get asked the most often when it comes to making oatmeal is how to make it in the microwave.

Let me start by first saying this: you may think that it is faster to make in the microwave, but in my experience, stovetop oats is a lot faster. 

Here's what I mean. When making oatmeal in the microwave, the initial cooking time will be faster. But after putting it in the microwave, you are going to have to leave the oatmeal in the microwave to rest so that it can absorb some of the liquid and continue cooking a little longer.

The great thing about this Strawberry Cheesecake Oatmeal recipe is that while this oatmeal is cooking on the stove, you can make the cheesecake ingredients so it will all be done at once. But if you still wanted to make the oats in the microwave, you would need to reduce the total amount of liquid so that it is equal to ¾ cup, then microwave on high for 2 minutes. Then let it stand in the microwave for at least 2 additional minutes.

Ingredients

  • 1 cup milk of choice
  • 1 cup water
  • 1 cup rolled oats
  • 2 tablespoon chia seeds
  • 3 tablespoon cream cheese, softened
  • 1 tablespoon powdered sugar
  • 1 tablespoon strawberry preserves
  • 4 medium strawberries, diced
  • graham cracker crumbs

Instructions

  • Heat the milk and water in a medium saucepan over medium heat until it begins to simmer. 
  • Add in the oats and bring to a boil. Mix in the chia seeds. Reduce the heat and allow to simmer for 4 to 5 minutes, stirring continuously until thickened.
  • In a small food processor, pulse together the cream cheese and powdered sugar until smooth.
  • In a small bowl, heat the strawberry preserves in the microwave for 30 seconds. Mix in the diced strawberries.
  • Divide the cream cheese mixture over the bowls. Top evenly with strawberry mixture and top with graham cracker crumbs.
