Today, I want to talk about someone who is really important to me. Someone who never wants to push her way into my life, but is always there when I need help. That person is my lovely mother.

I can't imagine what my life would be without her love and support. She always stressed the importance of sharing, and would always give up her desserts for me. Maybe she was the catalyst behind why I'm so eager to share my desserts with all of you.

She also might be the reason why I actually liked vegetables as a child. I remember when I was really young, I saw a commercial on TV about washing your hands. It said "wash your hands before you eat, then you'll get a real big treat" and it showed the kid in the commercial getting a bunch of marshmallows. Then it said "if you don't wash your hands, you won't get a real big treat" and the kid was given asparagus. The kid tried giving it to the dog, and even the dog didn't want it. And even at 5 or 6, I was offended by this. Every time I saw that commercial, I would say "I would WAY rather have the plate of asparagus! Give it to me!"

So to my mother, and mothers everywhere, thank you.

And to my invisible friends in the Blogosphere, if you don't know what to make your mom for brunch/lunch/dinner, I would recommend starting with some roasted asparagus. So easy to do, and super delicious.

Roasted Asparagus

Super simple Roasted Asparagus that is so quick and easy to make. This is one of my favourite side dish recipes that I make often.

Ingredients

  • 1 bunch asparagus, ends cut off
  • 3 tablespoon olive oil
  • 1 clove garlic, minced
  • salt and pepper to taste

Instructions

  • Preheat the oven to 425˚F.
  • Place the asparagus on a baking sheet, and drizzle with the olive oil. Roll the asparagus so that they are evenly coated with a thin layer of oil. Sprinkle on the garlic, salt and pepper, then rub over the asparagus so that they are evenly distributed.
  • Bake in the preheated oven until they are tender, around 10-12 minutes.

  1. My mom loves asparagus! I think I chose to like it because she did, too. That story is so sweet and so funny! I wish I had seen this yesterday - but I can still make it as a belated gift, right? Thanks Cathleen!

  2. What a lovely post!
    Sadly, I cannot relate to wanting asparagus instead of marshmallows at that age, but now - now I most definitely agree! It's terrible how they make vegetables out as something disgusting in cartoons and such, because children take note of this. THANKFULLY I later learnt to like vegetables, or rather, figured out that if I actually tasted it, it usually turned out to be quite nice 😛

    In Norway, Mother's day is on a different day of the year (which makes it very confusing as I live in Glasgow, but hey :P), but to all the mothers out there: Happy Mothers' Day!

  4. I love asparagus! I can't stop eating it right now. Raw, roasted, grilled -I love it all! Roasting them with evoo and salt is always my favourite way to eat them. Deeeelish!

  6. Yum, asparagus is one of my all time favorite vegetables. My kids love it too. It's one veggie that I know when I serve it there won't be any leftovers 😀

  8. I think the roasting is the best way to enjoy the asparagus. Nothing fancy to dress up. Enjoy the natural flavor of asparagus itself. Great job roasting!
