Today, I want to talk about someone who is really important to me. Someone who never wants to push her way into my life, but is always there when I need help. That person is my lovely mother.
I can’t imagine what my life would be without her love and support. She always stressed the importance of sharing, and would always give up her desserts for me. Maybe she was the catalyst behind why I’m so eager to share my desserts with all of you.
She also might be the reason why I actually liked vegetables as a child. I remember when I was really young, I saw a commercial on TV about washing your hands. It said “wash your hands before you eat, then you’ll get a real big treat” and it showed the kid in the commercial getting a bunch of marshmallows. Then it said “if you don’t wash your hands, you won’t get a real big treat” and the kid was given asparagus. The kid tried giving it to the dog, and even the dog didn’t want it. And even at 5 or 6, I was offended by this. Every time I saw that commercial, I would say “I would WAY rather have the plate of asparagus! Give it to me!”
So to my mother, and mothers everywhere, thank you.
And to my invisible friends in the Blogosphere, if you don’t know what to make your mom for brunch/lunch/dinner, I would recommend starting with some roasted asparagus. So easy to do, and super delicious.

Roasted Asparagus
Ingredients
- 1 bunch asparagus, ends cut off
- 3 Tbsp olive oil
- 1 clove garlic, minced
- salt and pepper to taste
Instructions
- Preheat the oven to 425˚F.
- Place the asparagus on a baking sheet, and drizzle with the olive oil. Roll the asparagus so that they are evenly coated with a thin layer of oil. Sprinkle on the garlic, salt and pepper, then rub over the asparagus so that they are evenly distributed.
- Bake in the preheated oven until they are tender, around 10-12 minutes.

My mom was the same way – I grew up loving fruits and vegetables. Thank goodness she taught me some really healthy eating habits!
Hehehe, your little story is so cute 🙂 My mother also instilled a love of vegetables in me! I think adults only don't like veggies because they never had them prepared well growing up…ok maybe this isn't true for everyone. Roasting asparagus is totally the only way to go. It's so quick, delicious and the cleanup is a breeze if you line your pan with foil!
what a sweet post and your asparagus look delicious. they are one of my favorites bc so easy and quick
Asparagus? Am I in the right blog? Hee…hee…This is great, Cathleen! I love my veggies and that was my mum's influence too 🙂
Well… My mum was really a terrible cook so her overcooked veggies didn't do much for my love of veggies… Lol.. But I learned to love them at some point and roasted asparagus is the best!
Awww, moms are wonderful, aren`t they? My mom always made me eat my veggies. I never hated it, but I still ate them since I knew they were healthy for me. 😀
I soooo Agree with you on this point!!!!!!! I love my veggies and my mom has also played a big role when it comes to making healthy food choices! Hats off to moms!!! They sure do know what's best for us, eh! 🙂 I'm LOVING this recipe!!!!! I love asparagus and this is such an honest and simple dish packed with flavor! I can almost taste the garlic on the asparagus when it gets roasted! Yum! <3
