Tips and Recommendations

One of the big tips in this recipe is DO NOT skip the refrigeration step! I know that it's so tempting to skip that step because it's time consuming, and you want cookies RIGHT NOW. I get it. I often omit that step when I see it in cookie recipes. However, for this recipe, it's pretty crucial.

If you omit that step, your cookies are going to spread. And instead of a cute bite sized cookie you are going to end up with a pancake.

My one recommendation for these cookies is to use Bonne Maman raspberry preserves. I have tried making these cookies with other jams and they just don't compare. It is more expensive, but it makes a world of difference in these cookies.
