Who doesn’t love mornings?
Mayyybe I’m just looking at the sample size of one, which is myself. I am THE morning person. Even if I don’t set an alarm, I wake up before 7 AM no fail. So you can see how problematic it is if I want to make breakfast for everyone on weekends, where the majority just want to sleep in until noon.
I have only just started following the quinoa craze recently, which means that so far I have only experimented with some savory quinoa dinners. So on this lonely early morning, I decide to do the complete opposite: a sweet quinoa breakfast.
I’ve got to tell you people, these are THE pancakes to wake up to in the morning. I mean, what’s better than a fluffy protein packed pancake. I was really surprised by how fantastic these pancakes were. I truly believe that quinoa is the ultimate ingredient.

Quinoa Pancakes
Ingredients
- 1 cup cooked quinoa
- 1/2 cup all-purpose flour
- 1/4 cup whole wheat flour
- 2 tsp baking powder
- 1 large egg
- 1 large egg white
- 1 Tbsp salted butter, melted
- 1/4 cup milk
- 2 Tbps maple syrup
Instructions
- In a medium bowl, mix together the quinoa, flours, and baking powder.
- In a separate bowl, whisk together the egg, egg white, butter, milk and maple syrup until smooth.
- Slowly mix the wet ingredients into the dry ingredients until fully combined.
- Heat a large skillet over medium heat and spray with cooking spray. Scoop 1/4 cup of batter for each pancake, and flip when bubbles are covering the surface of the pancake. Cook the other side until it is golden.







I really like the idea of quinoa pancakes. Definitely something I should try. Not for breakfast, though – I'm just not that hungry in the morning. But for dinner? Yes, please. 😉

I wondered at first if you had ground the quinoa. I grind it and add the powder to smoothies, porridge etc. Your pancakes look really wonderful!
Love these pancakes. I could imagine a huge stack of these before my whole family wakes up. I love my mornings, so calm, peaceful.

I can relate…I'm a morning person and my husband is not! I love a good sit-down weekend breakfast so my husband has to wake up early. : ) Luckily, he's a good sport. I adore quinoa but never tried it in a pancake – given how surprisingly light it is, I bet it's as good like you said!
These might allow me to cook pancakes again for the manservant. After all they are full of fiber and protein. Great job Cathleen!
