Christmas day. Well into the winter season. Is it still acceptable to bake with pumpkin?

HEAR ME OUT HERE. Pumpkin season should not be limited to a couple of months a year. We are all out here using canned pumpkins, right? I see the shelves completely clear of pumpkin puree cans from September to November. No one is baking the pumpkin to get the puree.

So now, while I can find pumpkin puree on the shelves of my local grocery store, I am going to take full advantage of it and bake some treats.

Because you really can't go wrong with pumpkin loaves, this Pumpkin Streusel Loaf is a no brainer.

While my Starbucks Pumpkin Bread is always one of my favourites, this streusel bread is also a good alternative when you want something different.

The streusel is one of my favourite parts about this loaf. This loaf reminds me of my Pumpkin Steusel Muffins, but in bread form. Because sometimes, it's just easier to pour the batter into a loaf pan than it is to individually scoop out muffins.

What you need to make Pumpkin Streusel Loaf

This bread is also so easy to make. All you need is:

  • pumpkin puree
  • eggs
  • sugar
  • oil
  • flour
  • baking soda
  • pumpkin pie spice
  • butter

That's it!

Ingredients

Loaf

  • ¾ cup pumpkin puree
  • 2 large eggs
  • 1 cup granulated sugar
  • ½ cup oil
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 3 teaspoon pumpkin pie spice

Streusel

  • cup all-purpose flour
  • cup granulated sugar
  • ¼ teaspoon pumpkin pie spice
  • 2 tablespoon salted butter, melted

Instructions

  • Preheat the oven to 350°F. Line a loaf pan with parchment paper and set aside.
  • In a large bowl, cream together the pumpkin, eggs, 1 cup sugar and oil.
  • In a separate bowl, mix together the flour, baking soda, salt and pumpkin pie spice.
  • Slowly mix the dry ingredients into the wet ingredients until just combined. Do not overmix.
  • Pour the patter into the prepared loaf pan.
  • In a small bowl, mix together all of the steusel ingredients except the butter until combined. Mix in the butter until crumbly.
  • Top the loaf with the streusel and bake in the preheated oven for 60-65 minute, or until a toothpick inserted comes out clean.

Notes

  1. Store in an airtight container in the fridge for up to 6 days.

    What a beautiful loaf of bread! I'm in love with anything topped in streusel, and on top of pumpkin bread is a match made in heaven!
