Streusel

salted butter,
melted
Instructions
Preheat the oven to 350°F. Line a loaf pan with parchment paper and set aside.
In a large bowl, cream together the pumpkin, eggs, 1 cup sugar and oil.
In a separate bowl, mix together the flour, baking soda, salt and pumpkin pie spice.
Slowly mix the dry ingredients into the wet ingredients until just combined. Do not overmix.
Pour the patter into the prepared loaf pan.
In a small bowl, mix together all of the steusel ingredients except the butter until combined. Mix in the butter until crumbly.
Top the loaf with the streusel and bake in the preheated oven for 60-65 minute, or until a toothpick inserted comes out clean.
Notes
Store in an airtight container in the fridge for up to 6 days.
