My jar of peanut butter is empty. I guess that means that I need to use my other favorite spread. It needs no introduction. You know what it is.
Probably half of any given jar of Nutella ends up being combined with peanut butter, like in my Rice Krispies Peanut Butter and Nutella Brownies. The rest? Well that usually just ends up spooned into my mouth. So I wanted to switch it up a little. I wanted to be fancy by baking my Nutella right into some breakfast worthy granola.
And while I'm still opening and closing the enormous amount of boxes littering my house, searching for my belongings, I can find some comfort in eating pretzels and chocolate for breakfast. Because if that won't cheer me up and get me ready for the day, then I don't know what will.
Key Ingredients

- Rolled oats: forms the base of the granola. You can also use quick oats instead, however the texture will be slightly softer and less chewy.
- Honey: adds sweetness and helps create those granola clusters after the granola bakes.
- Pretzels: gives this granola that sweet and salty combo, and also adds a delicious crunch.
- Nutella: is the star ingredient in this recipe! For a different variation, try replacing some or all of the Nutella with peanut butter or cookie butter.
How To Make Pretzel and Nutella Granola

Step 1: In a small bowl, microwave the Nutella and the honey for 20-30 seconds. Mix until smooth. In a separate medium bowl, mix together the crushed pretzels and oats.

Step 2: Pour the Nutella mixture on top of the oat mixture. Spread the granola evenly on a parchment paper lined baking sheet, and bake at 320˚F for 17 minutes. Allow to cool completely before breaking into clusters.

Pretzel and Nutella Granola Recipe Tips
Storage: Store this Pretzel and Nutella Granola in an airtight container at room temperature for around 3 weeks.
Line your baking sheet. Because the Nutella and honey can get sticky, lining your baking sheet with either parchment paper or a silicone baking mat will prevent the granola from sticking, and makes cleanup so quick and easy.
Do not skip the cooling time! I know it is tempting to eat the granola right off the pan, but allowing the granola to cool will help create those crunchy clusters.
Watch the granola closely near the end. The Nutella contains sugar and milk solids that can burn quickly in the final few minutes. Keep an eye on your granola at around the 15 minute mark to prevent over-browning.

I'm frankly surprised you allowed a jar of peanut butter to go open without a backup jar ready. But I'll forgive you since you had Nutella on hand.
