Peanut Butter and Chocolate Chex Bars

Easy Peanut Butter and Chocolate Chex Bars recipe. These no bake bars are my favorite treat, and are ready in under 10 minutes.

These bars are some of the best things that I have made in a while.

​Every weekend, my toddler requests homemade chocolate chip cookies. And while I love making chocolate chip cookies, I was just far too lazy to turn on the oven and then wait for the cookies to bake. This easy recipe is no bake and ready in under 10 minutes.

It is also a great way to use up any leftover Chex cereal. One of the reasons I made these bars is because I was looking through my pantry and found some wheat Chex cereal that needed using. This is honestly the best way that I could think of using it. The chocolate peanut butter mixture can't be beat, and it is not made with any high fructose corn syrup or palm oil like some other bars you would buy from the grocery store.

I can already tell that I am going to be making these bars over and over in the upcoming months.

Peanut Butter and Chocolate Chex Bars Ingredients

You only need 5 ingredients to make these no bake chocolate peanut butter chex bars. All you need is:

  • semisweet chocolate chips
  • creamy peanut butter
  • maple syrup
  • coconut oil
  • chex cereal

Equipment

  • large bowl (make sure it is microwave safe!)
  • 9 x9-inch pan
  • silicone spatula

Tips

Storage: ​Store any leftover cereal bars in an airtight container at room temperature for up to 2 weeks, or in the refrigerator for up to 2 months.

What kind of Chex Cereal to use. I used the wheat Chex cereal, but rice Chex or corn Chex cereal would also work well in this recipe.

Replace the melted chocolate with a chocolate of your choice. Dark or white chocolate chips work so well if you want a classic bar. But if you want to enhance the peanut butter flavor, try using peanut butter flavored chips.

Try another cereal. Use whatever cereal you have on hand for these cereal treats. When making the cereal mixture, replace your favorite cereal for the Chex. I love either corn flakes or crisp rice cereal.

Ingredients

  • 1 ½ cups chocolate chips
  • 1 cup peanut butter
  • ½ cup maple syrup
  • ¼ cup coconut oil
  • 3 cups Chex cereal

Instructions

  • Line an 9x9 square pan with parchment paper. Set aside.
  • In a large microwave save bowl, add the chocolate chips, peanut butter, maple syrup and coconut oil. Microwave in 30 second intervals, mixing until smooth.Li
  • Mix in the Chex cereal until fully coated.
  • Pour the mixture into the prepared baking pan. Press down with a silicone spatula.
  • Place in the fridge to cool completely, then cut into squares.
