Paleo Chocolate Chip Muffins

Typically, I am a blueberry muffin person. When given the choice, I will choose those big blueberry jumbo muffins from Costco.

But looking in my pantry, I saw that I had some almond flour that needed using. So I made these Paleo Chocolate Chip Muffins on a whim.

Even though this is the first time that I made paleo or gluten free chocolate chip muffins, I think this might be one of my new favorite muffins. Next time I am going to have to try making paleo blueberry muffins when blueberries are finally in season.  You can expect to see some more paleo recipes on my blog. I had no idea how delicious they could be while still using healthy ingredients.

Paleo Chocolate Chip Muffins Ingredients

You just need a couple of simple ingredients to make these paleo chocolate muffins. All you need is:

  • almond flour
  • baking soda
  • whole eggs
  • pure maple syrup
  • coconut oil
  • apple cider vinegar
  • vanilla extract
  • dairy free dark chocolate chips

Tips

Storage: ​You can store these paleo muffins in an airtight container at room temperature for up to 2 days. To make them last longer, store them in the fridge for up to 1 week.

Do not use muffin liners. While muffin liners are appealing because it creates less mess with the muffin tin, the minimal amount of oil in this paleo muffin recipe causes the muffins to stick. This is why you will need to well grease the muffin pans when making these healthy muffins.

Variations

Flour to use in place of almond flour. I know almond flour is pretty pricey, but there are some other options for gluten free flours. If you don't have almond flour on hand, either almond meal, coconut flour or tapioca flour will work in its place.

Make these almond flour muffins vegan. Instead of using eggs. you can make a vegan egg replacer such as flax eggs or chia eggs. All you need to do to replace 1 egg is to mix 1 tablespoon of either chia seeds or flax seeds with 3 tablespoon water. Mix and allow to sit for at least 5 minutes before using.

Add in some fruit. I love adding in some orange juice and orange zest, like in my Orange Chocolate Muffins, or some diced strawberries, like in my Mini Strawberry and Chocolate Chip Muffins. But experiment with what you love or what you have on hand!

Ingredients

  • 2 cups almond flour
  • ½ teaspoon baking soda
  • 3 large eggs
  • ¼ cup maple syrup
  • 2 tablespoon coconut oil, melted
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon vanilla extract
  • ½ cup dairy free chocolate chips

Instructions

  • Preheat the oven to 325℉. Lightly spray a muffin pan with cooking spray and set aside.
  • In a medium bowl, mix together the eggs, maple syrup, coconut oil, apple cider vinegar and vanilla extract.
  • Slowly mix the dry ingredients into the wet ingredients until just combined. Fold in the chocolate chips.
  • Divide the batter between the 9 prepared cavities in the muffin pan, and bake in the preheated oven for 20-25 minutes, or until a toothpick inserted comes out clean.
