These Oatmeal Butterscotch Chocolate Chip Cookies are my favorite cookies to make when I am holiday baking, I can’t believe that I haven’t shared them with you all yet! I was going to wait to share these cookies closer to the holidays, but honestly they are so good to eat at any time of year.
The crispy edges surrounding a chewy center gives these cookies the perfect texture. The best part about this recipe is that it makes SO MANY cookies. 52 cookies to be exact. So you can make them for others while still having a lot left over for yourself. I always keep some in the fridge or freezer just to satisfy my sweet tooth. I promise you, these chocolate butterscotch oatmeal cookies will soon become your favorite cookie recipe.

Oatmeal Butterscotch Chocolate Chip Cookies Ingredients
This chocolate oatmeal butterscotch cookies recipe is made with mainly pantry essentials. All you need is:
- old fashioned oats (also called rolled oats)
- all purpose flour
- white sugar
- dark brown sugar
- baking soda
- salt
- oil
- large eggs
- vanilla extract
- semi-sweet chocolate chips
- butterscotch chips

Tips
Storage: Store these oatmeal chocolate chip butterscotch cookies in an airtight container at room temperature for up to 3 days.
Swap out the chocolate chips. Instead of using half butterscotch chips and half semi-sweet chips, switch it out with your favorite chocolate chips! One combo I love is half white chocolate chips and half dark chocolate chips.
What oats to use. Since I like these cookies to have a chewy texture, I use old-fashioned oats. You can use quick oats, but you won’t get a really chewy cookie.
Make ice cream sandwiches. These homemade cookies are perfect for ice cream sandwiches. Using a small cookie scoop, scoop some ice cream on top of a cooled cookie, then sandwich another one on top.

Oatmeal Butterscotch Chocolate Chip Cookies
Ingredients
- 2 1/2 cups rolled oats
- 2 cups all purpose flour
- 1/2 cup granulated sugar
- 1 cup brown sugar
- 1 tsp baking soda
- 1 tsp salt
- 1 cup oil
- 2 large eggs
- 4 tsp vanilla extract
- 3/4 cup chocolate chips
- 3/4 cup butterscotch chips
Instructions
- Preheat the oven to 350℉. Line baking sheets* with parchment paper and set aside.
- In a large bowl, mix together the oats, flour, sugars, baking soda and salt. Add in the oil, eggs and vanilla, and mix until fully combined.
- Fold in the chocolate chips and butterscotch chips.
- Using a medium cookie scoop, scoop the cookie dough onto the prepared baking sheets and bake in the preheated oven for 10-12 minutes, or until set and golden.
Notes
- This recipe makes a lot of cookies, so you will need to make them in quite a few batches.
