Ingredients

  • 2 1/2 cups rolled oats
  • 2 cups all purpose flour
  • 1/2 cup granulated sugar
  • 1 cup brown sugar
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup oil
  • 2 large eggs
  • 4 tsp vanilla extract
  • 3/4 cup chocolate chips
  • 3/4 cup butterscotch chips

Instructions

  • Preheat the oven to 350℉. Line baking sheets* with parchment paper and set aside.
  • In a large bowl, mix together the oats, flour, sugars, baking soda and salt. Add in the oil, eggs and vanilla, and mix until fully combined.
  • Fold in the chocolate chips and butterscotch chips.
  • Using a medium cookie scoop, scoop the cookie dough onto the prepared baking sheets and bake in the preheated oven for 10-12 minutes, or until set and golden.

Notes

  1. This recipe makes a lot of cookies, so you will need to make them in quite a few batches.
