Can you believe that I don't have very many no bake cookies on my website?

This summer was HOT. We basically kept ourself inside for the past 3 months, and made sure to not turn on the oven if we could help it. Since my 2 year old was requesting cookies all summer, I turned to my website to see what I could make. And I found a total of two no bake cookie recipes. This HAD to change.

So I started making these cookies. And my husband has already declared them to be his favorite cookies. I have made them at least 4 times this month, they are so good. Last night, when I was looking for a healthy snack to eat while nursing my newborn, I couldn't help grabbing a couple of these chewy oatmeal cookies. They are dangerous in my house, I can't walk past them without eating at least one.

No Bake Nutella Cranberry Oatmeal Cookies Ingredients

This Nutella Cranberry Oatmeal Cookie recipe mainly uses pantry essentials, making them such an easy treat to make at the last minute. All you need is:

  • granulated sugar - or brown sugar
  • salted butter - or unsalted butter with ¼ teaspoon kosher salt
  • milk - any kind of milk works well here
  • cocoa powder - make sure it is the unsweetened variety
  • Nutella - or any chocolate hazelnut spread
  • vanilla extract - or almond extract
  • quick oats - also known as instant oats
  • dried cranberries - dried works best. Fresh cranberries would make this cookie too tart and throw the texture off

Tips

Storage: ​Store these oatmeal cranberry cookies in an airtight container at room temperature for up to 5 days.

Use a different spread. ​While I love Nutella, you can replace it with whatever spread you like. I personally love using natural peanut butter, almond butter or cookie butter.

For a thicker cookie: ​Use a cookie scoop. This creates a more chewy texture to the cookies.

Try different mix-ins. ​Instead of the dried cranberries, replace them with any type of dried fruit or nuts you like! I just wouldn't use any kind of chocolate chips since they will melt when folding them into the other ingredients.

Ingredients

  • 1 ½ cups granulated sugar
  • ½ cup salted butter
  • ½ cup milk
  • ¼ cup cocoa powder
  • ½ cup Nutella
  • 1 teaspoon vanilla extract
  • 3 cups quick oats
  • ¾ cup dried cranberries

Instructions

  • Line 2 baking sheets with parchment paper and set aside.
  • In a medium saucepan, cook the sugar, butter, milk and cocoa powder over medium heat until the butter has melted. Mix well. Bring to a rolling boil, then allow to boil for around 4 minutes.
  • Remove from heat, then mix in the Nutella and vanilla until smooth. Fold in the oats and dried cranberries.
  • Using a medium cookie scoop, scoop the cookie dough onto the prepared baking sheets. Allow to cool at room temperature, then store in an airtight container.
