Is my nacho obsession getting out of hand?

First it was the Easy Nachos. Then we had the Nacho Quesadillas, a personal favourite. Now, I'm on to Nacho Omelettes.

And trust me when I say, this one is the best yet.

When me and John moved to Chicago (that must have been what? 11 days ago?), we were SHOCKED at how cheap eggs are here!

In Canada, we would buy at least 3 cartons of eggs when we saw them on sale for $2. But here? The store around the corner sells a carton of eggs for $0.69 as their regular price.

REGULAR PRICE LESS THAN $1???

Looks like we will be eating a LOT of eggs from now on!

And a lot of these egg creations we will be making will most likely be this Nacho Omelette. 

This omelette is so dang good that I kept making it on a daily basis for 1 week straight.

Now that may have been because I opened a very large can of sliced black olives that needed using. But a main reason really is that this is extremely tasty.

(also, did I mention how cheap eggs are??)

What you need to make this Nacho Omelette

You don't need much at all! All you need is:

  • ghee (or oil or butter)
  • whole egg & egg white
  • seasoning salt
  • cheddar cheese
  • black olives
  • cherry tomatoes
  • green onions
  • tortilla chips
  • guacamole

This omelette can really be eaten at any time of the day, be it breakfast, lunch, dinner...

snack...

dessert...

And with the dollop of guacamole on top that is optional, but not really that optional? You will fall in love with this meal, I pinky promise!

Ingredients

  • 1 tablespoon ghee
  • 1 large egg white
  • 1 large egg
  • seasoning salt
  • 3 tablespoon cheddar, shredded
  • 2 tablespoon black olives
  • 2 cherry tomatoes, chopped
  • 1 tablespoon green onions, diced
  • 2 tortilla chips, crushed
  • guacamole

Instructions

  • Heat the ghee in a medium skillet over medium heat.
  • In a small bowl, beat together the egg white, egg and seasoning salt. Pour over the heated skillet and cook until the egg has hardened. Flip the omelette and reduce to medium heat.
  • Top one side with cheese, olives, tomatoes, green onions and tortilla chips. Fold over and transfer to a plate. Top with guacamole.

Notes

I love using ghee in my cooking, but you can use butter or oil if that's what you have on hand.

    I love omelets for weekend brunch. This one looks like a really fun spin on the classic, especially with the crunch from the tortilla chips!

    Haha that ARE cheap eggs! But coming from Norway I guess most groceries are cheaper in the US. But that does not stop me from having eggs all the time (did I mention Norwegian eggs are the best?). This nacho omelette looks so scrumptious and I need to make it asap!
