Heat the ghee in a medium skillet over medium heat.
In a small bowl, beat together the egg white, egg and seasoning salt. Pour over the heated skillet and cook until the egg has hardened. Flip the omelette and reduce to medium heat.
Top one side with cheese, olives, tomatoes, green onions and tortilla chips. Fold over and transfer to a plate. Top with guacamole.

I love using ghee in my cooking, but you can use butter or oil if that's what you have on hand.
