It seems like almost immediately after Valentine's Day, I am already thinking about St Patrick's Day. It's that time of the year already. My last post: White Chocolate Matcha Latte, was only just warming you up (pun.. maybe intended) for a whole slew of green themed St Patrick's Day recipes. Let's kick it off with one of the most St Patrick's Day themed recipes around: Mint Chocolate Chip Cookies.

I actually made these cookies for the first time around Christmas time, but was so swamped with work back then that I didn't have the time to post about it. Then December became January, and it just seemed wrong to post about mint flavored cookies when New Years resolutions were just made. No one wants a cookie to ruin their healthy eating resolutions.

But now January is over and St Patrick's Day is coming up. Cookies, green and mint flavored things are IN.

Mint Chocolate Chip Cookies Ingredients

​All you need to make these mint chocolate cookies is:

  • unsalted butter
  • white sugar
  • brown sugar
  • vanilla extract
  • baking soda
  • hot water
  • white flour
  • salt
  • pure peppermint extract
  • semi-sweet chocolate chips
  • green food gel (or green food coloring)

Tips & Tricks

Looking for the perfect round shape to your chewy cookies? You can either use a cookie scoop (I use a medium cookie scoop) or roll dough into cookie dough balls before placing it on the cookie sheet. This way it will spread to be perfectly round.

Enhance the peppermint flavor! Instead of using chocolate chips, try adding in some andes mints, chopped into small pieces. If it is around the holiday season, you can add in some chopped candy canes to the mix. You could even try making it with fresh mint, or adding in some andes mint chips. And for real mint chocolate lovers, serve these cookies with some Mint Chocolate Chip Ice Cream.

Storage: you can store these cookies at room temperature in an airtight container for up to 2 weeks. You can also place the cookies in a large freezer bag and freeze for up to 3 months.

Ingredients

  • 1 cup salted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 2 teaspoon hot water
  • 3 cups all-purpose flour
  • ½ teaspoon salt
  • 2 teaspoon pure mint extract
  • 2 cups chocolate chips
  • green food gel

Instructions

  • Preheat the oven to 350˚F.
  • Cream together the butter and sugars until light and fluffy. Beat in the eggs one at a time until fully combined. Mix in the vanilla.
  • In a small bowl, disolve the baking soda in the hot water. Mix in the sugar mixture. Stir in the flour, salt and mint extract. Fold in the chocolate chips. Add in some green food gel, and mix until you reach your desired color.
  • Scoop the batter onto an ungreased baking sheet and bake in the preheated oven for 10 minutes, or until the edges are lightly browned.
