Preheat the oven to 350˚F.
Cream together the butter and sugars until light and fluffy. Beat in the eggs one at a time until fully combined. Mix in the vanilla.
In a small bowl, disolve the baking soda in the hot water. Mix in the sugar mixture. Stir in the flour, salt and mint extract. Fold in the chocolate chips. Add in some green food gel, and mix until you reach your desired color.
Scoop the batter onto an ungreased baking sheet and bake in the preheated oven for 10 minutes, or until the edges are lightly browned.
