I know I should be making overnight oats during the summer. I am already hot and cranky when I wake up in the mornings. But there is something about a warm bowl of oatmeal that always cheers me up.

And this Matcha Cupcake Oatmeal definitely gets me going in the morning.

If you think that I have made this oatmeal before on my blog, you are mistaken. 

I have made a Matcha Latte Oatmeal before, which was a lot healthier than this breakfast idea.

But I'm pregnant and uncomfortable and this oatmeal is exactly what I have been craving lately.

And it actually uses surprisingly few ingredients. All you need is:

  • milk
  • oats
  • matcha powder
  • chia seeds
  • cream cheese
  • butter
  • powdered sugar
  • vanilla extract

So really just my pantry essentials!

It's so much easier to make than an actual cupcake. Plus, this breakfast will keep you satisfied until it's time for lunch.

Matcha Cupcake Oatmeal

Ingredients

  • 1 cup milk of choice
  • ½ cup old fashioned oats
  • 1 teaspoon matcha
  • 1 tablespoon chia seeds

Frosting

  • 0.5 oz cream cheese, softened
  • 0.5 oz salted butter, softened
  • cup powdered sugar
  • ¾ teaspoon milk of choice
  • ¼ teaspoon pure vanilla extract

Instructions

  • Heat the milk in a small saucepan. Add in the oats, matcha and chia seeds. Bring to a boil, and reduce the heat. Allow to simmer for 4-5 minutes, stirring occasionally. Remove from heat and set aside.
  • Meanwhile, in a small bowl, mix together the frosting ingredients until smooth. Set aside.
  • Pour the oatmeal into a bowl, and top with the frosting. Serve immediately.

Notes

You can use less frosting than me on this oatmeal. I just love a lot to mix in to the oatmeal.
