Friday! We made it! What are you doing to celebrate the weekend?

I bought a bag of brownies from the store to celebrate the weekend. Yes I know.. even though I am a food blogger I still buy pre-made brownies. Sometimes I just need an easy sweet tooth fix.

The problem? When I got home and bit into the first one it was stale!! Bleh, maybe I should have made the brownies myself.

But, since I won't let a bag of stale brownies ruin my day, I took those lemons and made lemonade.

Making this leftover brownie bread pudding was a life changer. Since I have stale brownies lying around almost on a daily basis (perks of being a food blogger!), I now have something to do with them, other than my grinning and bearing the staleness.

This bread pudding was amazing!! I almost want to let all my brownies go stale just so I can make this again. This is fairly sweet, so I would suggest you eat it with tea or coffee. Because even though I write that the ice cream is optional... we all know it really isn't.

This recipe uses only six ingredients, most of which you will have in your house. The hardest ingredient to locate would be the stale brownies.

BUT, if you happen to buy a bag of brownies and they are stale when you open it "fresh" from the store, do NOT throw them out! Consider this recipe. And then thank me later.

Ingredients

  • 3 cups leftover brownies cut into cubes
  • 2 oz shredded coconut
  • 2 oz chocolate chips
  • ¾ cup coconut milk
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • vanilla ice cream for topping (optional)

Instructions

  • Preheat the oven to 350˚F. Lightly spray an 8x8 baking pan.
  • Sprinkle the brownies, shredded coconut and chocolate chips evenly in the prepared baking pan. Set aside.
  • In a medium bowl, whisk together the coconut milk, vanilla extract and eggs until fully combined. Pour over the brownies.
  • Bake in the preheated oven for 30 minutes. Top with vanilla ice cream, if desired.

    Turned out great! I increased the coconut milk somewhat (I like a slightly more custard-y bread pudding) and subbed slivered almonds for the coconut, since that's what I had on hand. I also let the ingredients rest on the counter for almost 30 minutes before baking, just out of habit. Delicious!

    I made this recipe today with very dry, stale brownies. I increased the liquid (A-2 whole fat milk) to 1 1/4 cups, and the vanilla to 2 teaspoons to make up for the dryness of the brownies. The result is delicious!

    1. I made brownies for my son's birthday, using Lakanto sugar substitute. It changed the texture of the brownie making them very dry. I used this recipe to see if I could rescue them. Phenomenal!

        Lifesaver, I followed a new brownie recipe that tasted like cocoa..way to much. Anyway I crumpled it down and made this. Saved the treats from trash, thanks

  3. This is an awesome way to use up stale brownies. We all do it, occasionally buy the odd pre-made treat or even the occasional cake mix. Sometimes even us food bloggers need a quick helping hand.

    1. Haha, so true. I just bought some cake mixes because I don't think I will have enough time to bake 100% from scratch this year!!
