When it comes to funfetti, the answer is always yes.

These oat bars kind of remind me of my Funfetti Vanilla Bean Sugar Cookie Bars, but feel a little healthier. Something about adding oats to baked goods makes them feel healthier, ya know?

Unless you decide to add ice cream on top of your stack, like I did above. 

This summer, I'm adding ice cream to everything. And I'm not sorry about it.

What do you need to make these Funfetti Oat Bars?

Basically just pantry essentials for these bars. All you need is:

  • sugar (brown and white)
  • butter
  • eggs
  • flour
  • baking soda
  • oats
  • sprinkles

That's it!

No need to wait for anyone's birthday to make these. Monday is a special occasion enough to make these Funfetti Oat Bars. It's so hot in Chicago this summer, and yet I still brave the heat of the oven to make them.

Funfetti Oat Bars

Ingredients

  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 cup salted butter
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3 cups old fashioned oats
  • 1 cup sprinkles

Instructions

  • Preheat the oven to 350˚F. Line a 9x13 inch baking pan with parchment paper and set aside.
  • In a large bowl, cream together the sugars and butter until light and fluffy. Add in the eggs one at a time, mixing until fully incorporated.
  • In a separate bowl, mix together the flour, baking soda, oats and sprinkles. Slowly mix the flour mixture to the sugar mixture until fully incorporated.
  • Spread the mixture evenly over the prepared pan and bake in the preheated oven for 25 minutes. Allow to cool completely in the pan before cutting into squares.

Notes

  1. Store in an airtight container for up to 5 days.
