Still pregnant, but I am also still making summer drinks for my husband. Because I want to find the best drink to make right after I have this baby. And these Watermelon Margaritas might be the perfect drink recipe to make as my first alcoholic drink post-baby.

I noticed the other day that I don't have any recipes on my website that uses watermelon. This is an absolute travesty. I love watermelon flavor, so I can't imagine why it took me almost 9 years to make a recipe using it. It may be because every time we buy a sweet watermelon, we eat it almost immediately. But last night, when our toddler went to bed, I thought: this was my chance. I could make the ultimate drink for the hot summer days we have ahead of us.

Watermelon Margaritas Ingredients

You just need a couple of simple ingredients to make this easy watermelon margarita recipe. All you need is:

  • ½ cup sugar
  • ½ cup boiling water
  • 2 cups seedless watermelon cubes
  • ¼ cup fresh lime juice
  • ¾ cup white tequila
  • kosher salt
  • lime wedge (to wet the rim of each glass)
  • ice cubes

Equipment

  • small pitcher
  • blender
  • fine mesh strainer
  • small plate

Two Watermelon Margaritas with salted rims.

Tips

Make sure you use a good quality high-speed blender. It is important when making the fresh watermelon juice that you use a good blender. Otherwise the cubed watermelon may not break down all the way.

Use your favorite tequila. While I like using blanco tequila, you can use any kind that you have on hand. I have heard that this recipe goes well with silver tequila, reposado tequila, or if you are feeling fancy, aged tequila. Use whatever you have on hand!

Variations

Make spicy watermelon margaritas. If you wanted a spicier version, muddle one serrano or jalapeño pepper with the watermelon juice. Then, instead of a salted rim, dip the rim of your glass in tajin. Serve with serrano or jalapeño slices.

Frozen Watermelon Margarita: If you wanted a frozen version, just mix all of the ingredients together in a blender! You can add in more ice if you want a slushier texture.

A couple of Watermelon flavored Margaritas with salt along the rim.

We had a lovely, hot sunny weekend with all the family and these watermelon margaritas were perfect. The adults loved them, and the kids had a non-alcoholic version. These will be on repeat all summer.
