I did absolutely nothing this weekend, and I'm not even mad about it. Took some time to relax and recharge for the week ahead.

And what better way to relax than with a Mango Coconut Vodka Cocktail?

I am very new to making cocktails. To be honest, I don't drink much. But since the pandemic first started, I feel like our alcohol consumption has gone up for sure. But from once a month, maybe it is now once a week.

Still not much in the grand scheme of things, but it has allowed me to experiment with different drinks.

And this one is so easy to make, there is really no excuse not to make it! All you need is:

  • fresh mango
  • water
  • sugar
  • coconut cream
  • vodka
  • orange juice
  • ice

That's it!

This drink is kind of like a Screwdriver, but so much more special.

I will be making this a lot more once mangoes are in season, but for now it will be a nice treat once in a while. Or whenever I  see a particularly good looking mango in my local grocery store.

Ingredients

  • 1 medium mango, peeled and pitted
  • 1 ½ cups water
  • ½ cup sugar
  • ¼ cup coconut cream
  • 4 oz vodka
  • 2 tablespoon orange juice
  • ice

Instructions

  • In a blender, puree the mango, water, sugar and coconut cream until smooth.
  • Fill two tall glasses with ice. Divide the vodka between the glasses.
  • Pour the mango mixture evenly between the two glasses. Top with 1 tablespoon orange juice each.
