Going to leave for Vancouver in 2 days, and we still have a lot of ground beef and assorted vegetables in our fridge. Help!

Good thing meatballs are one of the best freezer meals I know how to make. Now we will also have a meal when we come back on two weeks.

After all, coming back from a long period of no cooking requires some slow transitions into cooking for ourselves again. And this is going to taste great when we come back. Just as long as we don't eat it all before we leave.

There was a time that the only meal John would cook for me was meatballs.

No, scratch that. It was either frozen meatballs from a bag, or another oven ready meal that you can find in the freezer area. Examples: pizza bagels and fries, chicken nuggets and fries.. basically anything, so long as there is fries.

Not that I minded. Clearly I still eat like a teenager. And not like one of my health conscious teenager students. Like a pizza and brownies kind of teenager.

But now that our freezer can basically only fit 3 frozen pizzas, we needed to fend for ourselves and actually learn to cook. Like, real person food.

We have definitely come a long way from our freezer meal days. Sure, we still have the odd frozen pizza (and fries) now and again, but mostly we stick to home cooked meals.

...or fast food.

But, enough about us. Let me talk about these meatballs!!

They are so ridiculously quick and easy to make, these can be whipped up super easily on busy weekday nights, or on lazy weekends. I am talking about meatballs, from start to finish, in 30 minutes.

That is basically like freezer meatballs timing! And it is 10x better for you, made from scratch!

Well, that is depending upon how much gravy you make..

You can eat this with mashed potatoes and veggies, or on top of spaghetti like I did in these pictures. Any way you enjoy these, you can be sure that you will be going back for seconds. And maybe even thirds.

Yeah.. I think that these meatballs are going to be gone long before we leave for Vancouver.

I have to agree with the other users stating that this recipe was not only bland, but I could NOT taste the mustard at all. It was okay as written, and I added 3/4 teaspoon salt to the sauce along with Parmesan cheese. Like Lauren’s idea of adding caramelized onions and red peppers, but think I would also add mushrooms as well. DEFINITELY needs more mustard - a LOT more - at LEAST 2 Tablespoons. Will make it again with revisions. Appreciate the recipe, so thanks for the “starter”, as it is a more unique dish.

      1. Why so mean?? Someone was kind enough to publish a great recipe, there is no need to be so critical. You may not have liked them but I am positive others did. Please try to be less offensive!

This is probably just personal preference but as written, while I LOVED the meatballs, after tasting the gravy I felt it was very bland.. almost flour tasting so I ending up adding about 1/4 cup real maple syrup to it (I thought it would go well with the all spice and nutmeg in the meatballs) and we loved it with mashed potatoes! the meatballs were great even on their own and I never would of added those spices to meatballs so I will add this to my dinner rotation but with the added syrup.

  2. Making the meatballs tonight using ground turkey. They smell delicious. I’m excited to taste them.

These are so easy to make and delicious! I used 1lb of beef and cut back on the rest of the ingredients and they still turned out lovely. Thank you !

Absolutely delicious! My package of ground beef wasn't quite 1.5 pounds, it was about 1.22 so I didn't add the full amounts of everything else! The gravy was delicious, I added 2 Tbsp of dijon mustard, served this with mashed potatoes, peas, and bread! This would be delicious with egg noodles too! Would definitely make again!

    1. Yay!! I am so glad to hear this! That combo sounds amazing. I will need to try it with mashed potatoes and peas 🙂

What a good recipe. Thanks for sharing it. I added some spicy seasoning to it to give it a kick after it was cooked. So good! Thank you.

  8. Can't wait to try these! When I cook meatballs, I usually do it in a very hot oven on a cookie sheet lined with parchment. No frying mess and they are still nice and browned.

    1. No, sorry. I will try to add nutrition labels to this post soon though. I will let you know when I have them up!
