So grocery stores are now selling whole turkeys. That means one thing. Thanksgiving is just around the corner, and I am HERE for it!

Okay, so maybe it is not so close in the US. But Canadian Thanksgiving is in a couple of weeks, so I am just helping out anyone who has a lot of leftover turkey. These Easy Leftover Turkey Enchiladas are a great way to use up any extra turkey I'm going to be having around the holidays.

Another reason these delicious turkey enchiladas are such a great meal is that it is made with only 4 ingredients! And since I always forget to buy additional ingredients around the holidays, this is a great recipe to use what you already have at home.

Easy Leftover Turkey Enchiladas Ingredients

You just need 4 simple ingredients to make this leftover turkey enchilada recipe. All you need is:

  • turkey leftovers
  • red enchilada sauce
  • flour tortillas
  • shredded Mexican blend cheese (or cheddar cheese)
  • fresh cilantro and a dollop of sour cream (optional)

Tips

Make homemade enchilada sauce. ​Instead of buying enchilada sauce from the store, make your own enchilada sauce. I particularly like this enchilada sauce recipe, but if you prefer green enchilada sauce, this green sauce is really good.

Swap out the shredded turkey for rotisserie chicken. You can make these using shredded chicken instead of the turkey and it works great! Dark or white meat works!

Add in some more spice. If you want more spice to this dish, try adding in some black pepper, taco seasoning, or chili powder. For more flavor, I would suggest adding some onion powder, garlic powder or fresh herbs.

Include more filling. Because I wanted this recipe to be under 5 ingredients, I don't have much in these enchiladas. If you wanted to take this recipe to the next level, try adding in some black beans, green chiles, refried beans or Mexican rice. Some chopped onion, sweet potatoes or sweet corn would also be good additions.

Ingredients

  • 3 cups leftover cooked turkey meat shredded
  • 2 (10 oz) cans red enchilada sauce divided
  • 9 flour tortillas
  • 2 cups shredded Mexican-blend cheese

Instructions

  • In a large bowl, mix together the leftover turkey and 1 can of enchilada sauce.
  • Divide the mixture into the flour tortillas. Roll the tortillas tightly and place the seam side down in a large baking dish.
  • Top with the last can of enchilada sauce and shredded cheese. Bake in the preheated oven for 20 minutes, or until the cheese is melted.
  • Serve and top with desired toppings.
