It has been a busy week and I need something quick to make for breakfast. I don't know what it is, but it feels like I am drowning in work lately and I just can't catch my breath. Luckily, this Double Chocolate Baked Oatmeal is helping me at least reduce the mental load of making breakfast in the morning.

This baked oats recipe makes such an easy breakfast idea that I have been making it all week recently. My kids both love it, and I love how quickly it comes together. It's a great way to satisfy your sweet tooth in the morning, while also keeping breakfast relatively healthy. Even people who don't like oatmeal like this baked version! This is always a hit at my house, and I hope that you love it as much as my family does.

  • Quick oats: Can replace this with rolled oats, but it will have a denser texture.
  • Large eggs: This helps bind all of the ingredients together and adds moisture to the mixture.
  • Chocolate milk: Adds moisture to the mixture. You can also use regular milk if desired.
  • Unsweetened applesauce: For added sweetness. You can also replace this with mashed bananas.
  • White sugar: This is totally optional, and I honestly leave it out most of the time. I find it sweet enough with the chocolate milk and the chocolate chips, but it more cake like add it in!
  • Vanilla extract: Adds a nice subtle flavor. You can replace it with any other extracts you like.
  • Baking powder: This is to help the oatmeal rise slightly in the oven, and preventing it from being too dense.
  • Unsweetened cocoa powder: For that double chocolate taste.
  • Salt: Necessary to enhance all of the other flavors.
  • Chocolate chips: It can't be double chocolate without additional chocolate chips! You can also replace them with whatever mix-ins you like.

How To Make Double Chocolate Baked Oatmeal

Step 1: In a large bowl, mix together the oats, eggs, chocolate milk, applesauce, sugar, vanilla, baking powder, cocoa powder and salt. Mix in the chocolate chips.

Step 2: Pour the mixture into a lightly sprayed 9x9 inch baking pan and bake at 350℉ for 35-40 minutes. Allow to cool for around 10 minutes before serving.

Double Chocolate Baked Oatmeal Expert Tips

Storage: Store any leftover chocolate oats in an airtight container in the fridge for up to 7 days. Do not store are room temperature because the moisture in the oatmeal makes it go bad quickly.

Replace the quick-cooking oats. ​If you don't have quick oats, rolled oats or steel cut oats would work too. Just know that this will make this oats recipe more chewy and less fluffy.

Make it into a cake! Okay, maybe not a cake, but it will have a cake-like texture! Just place all the ingredients (except the chocolate chips) into a high-speed blender or a food processor, then mix in the chocolate chips.  Pour the mixture into your prepared baking dish, and sprinkle some extra chocolate chips on top. The baking time may decrease, so check on it at the 25-30 minute mark the first time you try this.

Swap out the chocolate chips. For a rich chocolate flavor, I would opt for dark chocolate chips. But if you don't want chocolate chips at all, some good swaps would be fresh fruit, dried fruits, sprinkles or your favorite toppings.

Ingredients

  • 2 ½ cups quick oats
  • 2 large eggs
  • 1 ½ cups chocolate milk
  • 1 cup unsweetened applesauce
  • ¼ cup granulated sugar (optional)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ¼ cup cocoa powder
  • ¼ teaspoon salt
  • ¾ cup chocolate chips

Instructions

  • Preheat the oven to 350℉. Lightly spray a 9x9 inch baking dish with cooking spray and set aside.
  • In a large bowl, mix together the oats, eggs, chocolate milk, applesauce, sugar, vanilla, baking powder, cocoa powder and salt until fully combined. Fold in the chocolate chips.
  • Pour the mixture into the prepared baking dish and bake in the preheated oven for 35-40 minutes. Allow to cool for around 10 minutes before serving.

Notes

  1. If you have any leftovers, store them in the fridge for up to 7 days. Do not store at room temperature as it can go bad easily depending on the temperature in your house.
  2. For denser oatmeal, swap out the quick oats with rolled oats.
  3. If you want a cake-like texture, blend all of the ingredients except for the chocolate chips in a blender before mixing in the chocolate chips.
  4. Change out the mix-ins. Replace the chocolate chips with nuts or dried fruit if you want to experiment with different flavors.
