It is nearing the end of the first quarter at my school, which means that when I bake treats, it is usually something quick and easy. Nothing that takes longer than 15 minutes to prepare from start to finish. I just can't seem to find the time.

So when I first made these pretzel peanut butter bites during the summer this year, I knew that I was going to be making this easy recipe over and over. Not only is it the perfect sweet and salty combination, it is the perfect treat to have with your afternoon coffee or tea. Or just an easy treat to bring with you on really busy days when you need something to satisfy your persistent sweet tooth.

Crunchy Peanut Butter Pretzel Bites Ingredients

You only need a handful of simple ingredients to make a batch of these peanut butter pretzel bites is:

  • chunky peanut butter
  • salted butter
  • powdered sugar (also known as confectioners' sugar)
  • mini pretzel twists
  • semi-sweet chocolate chips
  • coconut oil.

That's it!

Tips & Variations

Try some different variations! I love this recipe because it is so versatile. Instead of chunky peanut butter, try replacing it with smooth peanut butter. You can replace the semi-sweet chocolate for dark chocolate to give these salty pretzel bites a rich chocolate flavor, or milk chocolate if you like it more sweet. I like using white chocolate chips and adding colorful sprinkles to make it look like a pretzel sandwich meant for birthday parties. Making it according to the recipe card plus adding some flaky sea salt is also a nice simple variation

Storing these Crunchy Peanut Butter Pretzel Bites: Once the melted chocolate has set, you can store them in an airtight container and keep them in the fridge for up to 10 days. These also last a long time in the freezer if you put them in a freezer bag.

Replacing the peanut butter with natural peanut butter: ​The problem with natural peanut butter is that it is a whole lot runnier than regular peanut butter, meaning that the peanut butter mixture won't stick together as nicely. You can remedy this by adding less natural peanut butter, or increasing the ingredients for the filling.

Make sure you use a microwave-safe bowl! The amount of times that I have nearly burned myself on the bowl coming out of the microwave is crazy while making these. A medium bowl works well, but it really depends on how big of a batch you are making

Jazz these pretzel bites up for the holidays! It's that time of year. The holiday season is coming up, and making these pretzel bites might be the easiest way to take this last minute snack idea to the next level. One way that I am thinking of changing them up for Christmas is adding some crushed peppermint on top of the chocolate coating. You can do the same for Halloween by adding spooky sprinkles on top. There are so many different options!

Crunchy Peanut Butter Pretzel Bites

Ingredients

  • 1 cup crunchy peanut butter
  • 1 tablespoon salted butter, softened
  • ½ cup powdered sugar
  • mini pretzel twists
  • 1 cup chocolate chips
  • 1 tablespoon coconut oil

Instructions

  • Line a cookie sheet with parchment paper. Set aside.
  • In a medium bowl, cream together the peanut butter, butter and powdered sugar until light and creamy.
  • Scoop around 1 Tablespoon of the mixture, and form a ball with your hands. Place in between 2 pretzels and press down slightly. Place on the prepared cookie sheet and repeat with the remaining peanut butter mixture.
  • Place the cookie sheet in the fridge. While the pretzels are chilling, add the chocolate chips and coconut oil to a small microwave safe bowl. Microwave in 30 second intervals, mixing until smooth.
  • Remove the pretzel bites from the fridge. Dip one side into the chocolate and return to the cookie sheet. Once all the pretzel bites have been dipped in chocolate, return the cookie sheet to the fridge, and refrigerate until the chocolate has hardened.
