Hey guys! I made you dessert. Based off of my Chocolate Peanut Butter Coconut Cups that I made a while ago, but this time I added Rice Krispies. Which somehow makes it taste 10x better and has a nice crunch to it. If you were wondering, this is my after lunch, after school, and after dinner snack almost every day. And I wouldn't have it any other way.

Exams are in full swing at my school right now. Two of my classes wrote their exam today, and I have another group writing them on Monday morning. Which means that my evenings and weekends will be spent with a cup of coffee and a stack of exams to mark.

But with exams comes stress eating. Or eating out of sadness, because somehow my students walked out of it thinking that they failed.

Give me all of the chocolate right now!

What you need to make Crispy Chocolate and Peanut Butter Cups

This recipe uses 4 simple ingredients that you probably already have lying around your house:

  • chocolate chips
  • peanut butter
  • coconut oil
  • rice krispies

All of those ingredients are staples in my pantry, so most days you can find some of these Crispy Chocolate and Peanut Butter Cups in my fridge and/or freezer ready to be devoured.

And these days, they are disappearing faster and faster. Possibly because of exam season. Possibly because of my upcoming wedding. Or possibly because these are the most delicious quick and easy dessert recipes that I have made in a long time.

Lately I have been testing too many cake recipes in preparation for making my own wedding cake (I know 😲!! Crazy!) so I do not want to make TOO many of these chocolate cups. Which is why I now like that this Crispy Chocolate and Peanut Butter Cups recipe makes a total of 5 chocolate cups.

But even with a small yield, they are gone in 2 days max. And John won't even help me eat them.

That's mainly because I hide them in the back of my freezer so he doesn't know I made them. What is it they say? The sneaky bird gets the worm?

Or all of the chocolate. Which is tastier than worms anyways. Good thing John doesn't read my blog. He will never know about my secret freezer stash.

Crispy Chocolate and Peanut Butter Cups

Ingredients

  • ½ cup chocolate chips
  • 2 tablespoon peanut butter
  • 2 tablespoon coconut oil
  • ½ cup rice krispies

Instructions

  • Line 5 regular sized muffin cavities with paper liners or silicone liners. Set aside.
  • In a microwave safe bowl, microwave all of the ingredients except for the rice krispies in 30 second intervals, mixing after each interval until smooth. Fold in the rice krispies.
  • Divide the chocolate evenly into each cavity. Place in the freezer until the chocolate has hardened, around 30 minutes.
