You guys! After an oatmeal hiatus, I am back at it! With my favourite things to add to any oatmeal bowl: coconut milk, chia seeds and coconut chips. Also, Greek yogurt is pretty good too, so why not have a huge dollop on top and call it coconut cream pie oatmeal?

I don't think I have even tried an actual coconut cream pie before, but based on my oatmeal version, I think I would love the heck out of it.

Ever since I got another shipment of Holy Crap Cereal from my favourite company, I have been adding chia seeds every time I make oatmeal. It makes the oatmeal so thick and creamy, that I now couldn't imagine eating oatmeal without it. It also is great if you need more fibre and antioxidants in your life.

Not that that is my primary goal, but it is definitely an added bonus to having thick and creamy oats.

One of the reasons that I am so addicted to eating oatmeal is because it is so quick and easy to make for breakfast, it is very healthy (depending on what you put in it) and it requires very minimal ingredients.

What you need to make this Coconut Cream Pie Oatmeal

  • coconut milk
  • oats
  • chia seeds
  • Greek yogurt
  • coconut chips

If you don't have coconut chips on hand, I would suggest getting some. I put it on literally everything for breakfast, and eat it by the fistfuls during the day. Seriously best sugar free snack around!

Veganize it!

If you can find yourself a dairy free yogurt, you can make this vegan as well. I really like the So Delicious vanilla yogurt if you want to make this oatmeal completely vegan and dairy free. I have tried this oatmeal with a huge dollop of that yogurt on top multiple times this week, and loved it.

Even though I have made this recipe over and over lately, I am only just posting it now because it was so hard to take photos of this particular oatmeal. Don't ask me why, it just never really looked that appealing when I put it onto my computer.

To be honest, I am not 100% happy with the photos as they are now, but I didn't think it was fair to be tempting you with this recipe over on Instagram and not sharing it with you. So here it is. Hope you enjoy it as much as I do!

Ingredients

  • 1 cup coconut milk
  • ½ cup old fashioned oats
  • 1 tablespoon chia seeds
  • ¼ cup Greek Yogurt (plain or coconut)
  • 1 tablespoon coconut chips

Instructions

  • Heat the milk in a small saucepan on medium heat. Add in the oats and chia seeds. Bring to a boil, and reduce the heat. Allow to simmer for 4-5 minutes, stirring occasionally. 
  • When thickened, pour into a bowl. Top with yogurt and coconut chips.

  4. Oatmeal is one of those dishes that I'd love to like but, in reality, usually don't. There's just something so unappealing about bland, glommy oatmeal. I bet this is a million times better! I'm definitely going to give this a try!

  11. Have to love when breakfast is actually healthy but tastes like a treat! The toasted coconut on top looks wonderful. Love the addition of chia seeds for extra protein.
