Every time I pull out the tub of peanut butter, I feel a little sad. I have friends who have crazy peanut allergies, and I can't believe they cannot eat one of the best things that has ever happened in the world of food.

I can eat peanut butter everyday in sandwiches, with apples, or my personal favorite, with a fork straight out of the tub. So when I make them something for their birthday, I'm always careful to keep my peanut buttery hands away from anything that will later come into contact with my friend with such an unfortunate allergy.

Luckily, I have a friend whose birthday is coming up, and matches my love for peanut butter. This obviously means that I must bake cookies FILLED with the stuff. And this time, it will literally be filled with it.

So if you have a tub of peanut butter just calling out to you, waiting to be used, I would highly recommend these Chocolate Peanut Butter Filled Cookies. They are like a peanut butter cup but in cookie form. If you want chewy cookies with a pb filling, these peanut butter filled chocolate cookies are the perfect cookie for you.

Chocolate Peanut Butter Filled Cookies Ingredients

These peanut butter stuffed chocolate cookies are mainly made with pantry essentials. All you need is:

  • all purpose flour
  • cocoa powder
  • baking soda
  • white sugar
  • brown sugar
  • salted butter
  • creamy peanut butter
  • vanilla extract
  • egg
  • powdered sugar

Tips

Storage: Store these cookies in an airtight container at room temperature for around 5 days. You can store them in the fridge for up to 8 days, but they will begin to go dry.

Use a stand mixer to make the process easier. Mixing all of the dry ingredients and wet ingredients by hand can get exhausting. Putting the ingredients in the bowl of your stand mixer with a paddle attachment and having it do the work will make this recipe seem a whole lot more doable, especially the peanut butter center mixture.

Wet your hand a little when shaping the chocolate dough. To prevent the dough from sticking to the palm of your hand, I would recommend making them a little damp before shaping the cookie dough balls. This will ensure a smooth ball, which will look a lot better when it comes to baking time.

​Variations

Try different mix-ins for the peanut butter mixture. I like a creamy peanut butter filling so I use creamy peanut butter, but you can use crunchy peanut butter or natural peanut butter in its place. Just know that if you are using the natural peanut butter, you will need to add a little bit more icing sugar to give it the proper texture. If you are allergic to peanut butter, try another nut butter such as almond butter.

Add in some chocolate chips. You can elevate this cookie recipe even more by adding some chocolate chips to the mix. I would try either dark chocolate or semi-sweet chocolate chips, as this would compliment the sweetness of these chocolate peanut butter cookies. Make sure to add some extra chocolate chips to the top!

Ingredients

Cookies

  • 1 ½ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ½ cup granulated sugar (+more for rolling)
  • ½ cup brown sugar
  • ½ cup salted butter, softened
  • ¼ cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1 large egg

Filling

  • ½ cup icing sugar
  • ¾ cup creamy peanut butter

Instructions

  • Preheat the oven to 375˚F. Line a baking sheet with parchment paper and set aside.
  • In a medium bowl, mix together the flour, cocoa and baking soda until fully combined.
  • In a separate bowl, beat together the sugars, butter and ¼ cup peanut butter until light and fluffy. Add the egg and vanilla and beat until fully combined. Stir in the flour mixture until fully incorporated and set aside.
  • In a medium bowl, mix together the icing sugar and ¾ cup of peanut butter until smooth.
  • Take around 1 tablespoon of cookie cough and flatten with your palm. Place around 1-2 teaspoon of peanut butter filling in each then roll chocolate cookie dough over the peanut butter to close. Roll the cookie ball in sugar. Place the cookies on the prepared cookie sheet.
  • Bake for 7-9 minutes. Let stand on baking sheet for 2 minutes, then move to wire racks to cool.

  9. Hi! This is an awesome idea.. Can it be made into something else? Like chocolate chip or vanilla shortbread or sugar cookie? Or.. Maybe even a peanut butter cookie ! Or put chocolate or Nutella inside peanut butter cookies..! For any of this though can I use store bought mixed dough/pre made? (For peanut butter cookies with chocolate i would make the cookies myself because they are easy )

    Peanut butter and chocolate -- it doesn't get any better than that. A great treat for the kiddos. I know that my grandsons would be ecstatic if I made these cookies for them. They all love peanut butter. This is on my list to make this week.
