So you remember those Peanut Butter Smores Brownies that I made a week ago?

Yeah, well I liked them so much that I made a peanut free version, just so that I could bring them to school.

Now that is what you call love.

All I want is chocolate on chocolate, so these brownies are all the way up my alley.

First, you start with a chocolate chip brownie layer. Put it in the oven to bake up all gooey and fudgy.

Next, you sprinkle on some mini marshmallows. Anywhere from half a big to the whole bag. I won't judge.

Then you melt some chocolate and coconut oil to pour on top. This is my favourite part. Mainly because I will always sample the chocolate before pouring it on. You know, in case I screwed something up.

It is a sweetness overload, and I love every bite. These brownies are best enjoyed with coffee or tea, just because they are quite sweet. Unless you like sweet foods by themselves.

Honestly, I wouldn't blame you. I am all about desserts at any time of the day, with or without a hot cuppa tea or coffee.

I brought these Chocolate Marshmallow Layer Brownies to my school for their party before March break, and I was kind of glad when it wasn't all finished. Even though there was a lot of food brought to the party, these brownies were almost all gone.

Key word being almost It's like my students knew that I wanted some to snack on on my way home. Then the next week, I made it again. This time, for only me and John to enjoy.

  • chocolate chips
  • butter
  • egg
  • sour cream
  • sugar
  • vanilla
  • flour
  • baking powder
  • mini marshmallows
  • coconut oil

Chocolate Marshmallow Layer Brownies

Ingredients

Brownie

  • 4.25 oz semi sweet chocolate chips
  • cup salted butter
  • 1 large egg
  • 1 tablespoon sour cream
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • cup all-purpose flour
  • ½ teaspoon baking powder
  • cup milk chocolate chips

Other Layers

  • ½-1 bag mini marshmallows
  • 2 cups semi sweet chocolate chips
  • ½ cup coconut oil

Instructions

  • Preheat the oven to 350°F. Lightly spray a 9x13 inch pan and set aside.
  • In a microwave safe bowl, combine 4.25 oz semi sweet chocolate and ⅓ cup butter. Microwave in 30 second intervals, mixing until smooth. Set aside for 5 minutes to cool.
  • In a medium bowl, beat together the egg, sour cream, sugar and vanilla and beat well.
  • Add the melted chocolate into the egg mixture, and mix until fully combined. Add in the flour and baking powder, mixing until fully combined. Fold in the chocolate chips.
  • Pour into the prepared baking pan, and bake for 10-15 minutes, or until a toothpick inserted in the centre comes out clean.
  • Sprinkle evenly with marshmallows and return to the oven for 5-8 minutes, until the marshmallows puff and melt slightly. Remove from the oven.
  • Meanwhile, combine the chocolate chips and the coconut oil. Melt in 30 second intervals, mixing until smooth. Allow to cool for 3 minutes.
  • Spread the mixture over the marshmallow layer. Allow to cool for 10-15 minutes, then place in the fridge to cool completely. Cut into squares when cooled.
