Well, it is back to school time. Back to the books. Back to busing every day for 1.5 hours to get there. Oh the joys of transit.
Living on campus has always been my dream. There would be no more waking up at some ungodly hour to sit on the bus for 3 hours of my day. Waking up to the gorgeous campus of UBC, and not having to worry about the rush to get everything ready before I go.
But nope, nope, nope. UBC is plagued with construction, I live quite far, and mornings for me start at 5:30AM, and I come home pretty late. Which means I have no time to make breakfast, and no time to make lunch, and certainly no time to make dinner. My solution?
Buy hot chicken from the deli at Safeway of course! And what will I do with the leftovers?
Make this super easy, super delicious chicken salad. Maybe I do have time to make lunch after all.
*makes 4 sandwiches
What you’ll need:
-2 cups cooked chicken, cubed
-1/2 cup mayonnaise
-1 teaspoon italian seasoning
-1 stalk celery, chopped
-8 slices of bread
-lettuce
Directions:
1. In a medium bowl, mix all the ingredients together.
2. Place top 4 slices of bread with some lettuce. Divide the chicken salad between the 4 pieces of bread, then top with the remaining bread. Enjoy!

Try adding a pinch of cayenne pepper for an extra kick ! 😀
sounds like a good quick. Your day is pretty long… but this chicken sandwich fills you up, and I'm happy that you are able to fix one for yourself.
Take care,
Malou

This looks delicious. And something easy to make, pack or pick up and dash out!
I feel you…I have about an hour and a half of commuting to school too. Lunch and dinner can be a challenge! This looks delicious though. I am a big fan of chicken salad. Thank you for sharing!
delicious.. wish it goes straight into my mouth 🙂
I've not tried adding italian seasoning, I will do next time!
I think a sandwich like this is precisely what you need during a busy day 😀

Easy n yummy breakfast
This sandwich looks delicious, as it is great help during easy breakfast.
Sandwiches can be made to our each liking. I believe this chicken sandwich is super delicious!
Cathleen, this is one of my favorite ways to use leftover cooked chicken, especially if it is barbequed. I like to add chopped toasted walnuts or pecans to mine for a little meaty crunch.
I do this alot during my Uni days… And its very delicious!
I love chicken salad sandwiches. They're so classic.
I really love such chicken sandwiches. One of the most delicious thing for a quick snack 🙂 And just like you said- great way to use leftovers 😀
