Chicken Salad Sandwich

Well, it is back to school time. Back to the books. Back to busing every day for 1.5 hours to get there. Oh the joys of transit.

Living on campus has always been my dream. There would be no more waking up at some ungodly hour to sit on the bus for 3 hours of my day. Waking up to the gorgeous campus of UBC, and not having to worry about the rush to get everything ready before I go. But nope, nope, nope. UBC is plagued with construction, I live quite far, and mornings for me start at 5:30AM, and I come home pretty late. Which means I have no time to make breakfast, and no time to make lunch, and certainly no time to make dinner. My solution?

Buy hot chicken from the deli my local grocery store of course! And what will I do with the leftovers? Make this super easy, super delicious chicken salad sandwich. This is ready in under 5 minutes, which makes me think that maybe I do have time to make lunch after all.

Chicken Salad Sandwich Ingredients

These Chicken Salad Sandwiches are made with just 6 simple ingredients. All you need is:

  • cooked chicken
  • mayonnaise
  • Italian seasoning
  • celery
  • bread
  • lettuce

Tips

Storage:​ Store any leftover chicken salad in an airtight container in the fridge for 3-4 days.

Replace the mayonnaise. If you wanted a healthier version, replace the ½ cup of mayonnaise with plain Greek yogurt or light mayonnaise. If you wanted a more creamy chicken salad, try replacing it with sour cream.

Add some more spices and fresh herbs. ​This is a pretty classic chicken salad recipe, but you can always build on it. I love adding fresh dill or fresh parsley. Some dry spices you can think of adding is black pepper, onion powder or garlic powder.

Experiment with more veggies. Instead of the celery, try adding some red onion or green onions in the mix for an extra kick. Adding in some carrots and cucumbers gives it a great crunch, or you can skip the bread altogether and make lettuce wraps.

What part of the chicken to use? ​I love using a mixture of breast meat and dark meat. The dark meat adds lots of flavor to the chicken salad, while the breast meat gives it a good consistency.

Ingredients

  • 2 cups cooked chicken cubed
  • ½ cup mayonnaise
  • 1 teaspoon Italian seasoning
  • 1 stalk celery chopped
  • 12 slices bread
  • lettuce

Instructions

  • In a medium bowl, mix together the chicken, mayonnaise, italian seasoning and celery.
  • Top 6 slices of bread with some lettuce. Divide the chicken salad evenly between the pieces of bread, then top with the remaining slices or bread. Enjoy!

Notes

I recommend toasting the bread if you are eating it right away.

  1. Chicken salad is one of those things that's so simple to make but tricky to get exactly right. You've done a terrific job. I really feel for you with your commute - when I worked in NYC, for a bit mine was a good hour and a half each way (eventually I moved and got it down to just over an hour - bliss!).

  2. Awww...commuting to school must suck. I can barely wake up at 7am to go to an 8am class!

    But I`m sure this sandwich will be something I love! 🙂

  3. i know this is simple but truly satisfies my tummy! i also love egg sandwiches, grilled cheese..so many..i love sandwiches! i already had too much of that prawn, now i think we can exchange with one another!
