Does anyone remember those Two Bite Brownies? They are basically small bite sized brownies that look like a mini muffin. Exactly the same size and shape as these Cheesecake Brownie Bites.

Now I am wondering if they are a Canadian thing, because ever since I moved to the US I haven't seen them anywhere.

So when you can't get it in stores, you make them at home.

What do you need to make these Cheesecake Brownie Bites? 

This is basically a list of my pantry staples. All you need is:

  • eggs
  • cocoa powder
  • baking powder
  • cold brew concentrate
  • vanilla extract
  • white sugar
  • salted butter
  • flour
  • cream cheese

That's it!

Ingredients

Brownies

  • 4 large eggs
  • 1 ½ cups unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 2 teaspoon cold brew concentrate
  • 2 teaspoon vanilla extract
  • 2 ¼ cup granulated sugar
  • 1 cup salted butter, melted
  • 1 ½ cups all-purpose flour

Filling

  • 8 oz cream cheese, softened
  • 3 tablespoon granulated sugar
  • 1 large egg yolk

Instructions

  • Preheat the oven to 350°F. Lightly spray a mini muffin pan with cooking spray and set aside.
  • In a large bowl, mix together the eggs, cocoa powder, baking powder, cold brew concentrate and vanilla until fully combined. Mix in the sugar and butter. Fold in the flour until just combined. Set aside.
  • In the bowl of a stand mixer, cream together the cream cheese, sugar and egg yolk until smooth.
  • Scoop around 1 tablespoon of brownie batter into each muffin cavity. Spoon some cream cheese mixture on top of the brownie batter.
  • Bake in the preheated oven for 12 minutes, or until a toothpick inserted comes out clean.
  • Allow brownies to cool in the pan for around 10 minutes, then transfer to wire racks to cool completely.

Notes

  1. If you would like a nice marble effect, swirl the cream cheese layer into the brownie layer using a toothpick.
